Apple Pie by Grandma Ople ***** 813 Ratings

"This was my grandmother's apple pie recipe. I have never seen another one quite like it. It will always be my favorite and has won me several first place prizes in local competitions. I hope it becomes one of your favorites as well!"

INGREDIENTS:
1 recipe pastry for a 9 inch double crust pie
1/2 cup unsalted butter
3 tablespoons all-purpose flour
1/4 cup water
1/2 cup white sugar
1/2 cup packed brown sugar
8 Granny Smith apples - peeled, cored and sliced

DIRECTIONS:
Preheat oven to 425 degrees F (220 degrees C). Melt the butter in a saucepan. Stir in flour to form a paste. Add water, white sugar and brown sugar, and bring to a boil. Reduce temperature and let simmer.
Place the bottom crust in your pan. Fill with apples, mounded slightly. Cover with a lattice work of crust. Gently pour the sugar and butter liquid over the crust. Pour slowly so that it does not run off.
Bake 15 minutes in the preheated oven. Reduce the temperature to 350 degrees F (175 degrees C). Continue baking for 35 to 45 minutes, until apples are soft.

I have made and eaten a sour cream apple pie. I bake a lot and don't use exact measurements so I will try to help you the best I can. If you don't understand you can use and apple pie recipe that you find and use the ingredients I list, here goes.

Slice about 5 or 6 granny smith apples (soak in lemon juice water to keep from browning)
use about 1 1/2 cups sugar
about 1/3 cup flour
just a pinch of cinnamon & nutmeg
1 tsp vanilla
1 cup of sour cream

Topping:
about 1/2 cup brown sugar
about 1/3 cup of flour
cinnamon
about 1/2 stick of butter not margarine (tastes better)
cut ingredients together until crumbly, set aside.

You can use a store bought crust, brown a little first. Fill crust with fruit will be sort of liquid but will set nicely when baked. When almost done sprinkle crumbs on top. If you like cheese cake this sort of reminds you of that because the sourcream mixture sort of settles on the bottom and the apples rise to the top. it is delicious

The one I was going to share with you is packed, but this one is good, too. I made it acouple of times.

Family Apple Pie:

1 1/w cups flour
3/4 cup self rise flour
1/3 cup cornstarch
1/3 cup vanilla pudding mix
1 1/2 sticks of butter
1 Tablespoon sugar
1 egg, separated
1/2 cup water, approximately
extra sugar

The filling-
7 large apples
1/2 cup water
3 Tablespoons sugar
1/2 tsp cinnamon
1 tsp grated lemon rind
2 TBs Apricot jam

Sift the two flours, cornstarch, and vanilla pudding mix into a bowl, but the butter in; add sugar. Make a well in the center, add egg yolk and enough water to mix to a firm dough, lightly knead.
Cover, refrigerate for 1 hour. Roll out dough over half of the pastry on lightly floured surface, large enough to line a 9 inch pie pan. Spread teh the pastry with the jam, top with the cold apple mixture.
Roll out remaining pastry; brush with beaten egg white, cover with pastry. Press edge firmly together, trim and decorate or bursh top with egg white; sprinkle with extra sugar. Cut a few slits in top of pie to allow the steam to escape. Bake at 425 degress for 20 to 30 minutes.
The filling: Peel, quarter and core the apples; cut each quarter in half lengthwise, put in pan with water, sugar, cinnamon and rind. Cook uncovered for 5 minutes. Remove from heat, drain, cool to room temp.

APPLE AND POLENTA FLAN

1 liter milk
3/4 cup Castor sugar
45g butter
3 teaspoons grated lemon rind
1 cup polenta
3/4 cup sultanas
1/3 cup chopped walnuts
1/2 cup cream
1 large apple, thinly sliced
1 1/2 tablespoons maple syrup
3 teaspoons Castor sugar, extra
1/2 teaspoon ground cinnamon

Grease 20cm spring form tin
Heat milk, sugar, butter and rind in medium saucepan, stir over high heat, without boiling, until sugar is dissolved.
Bring to boil, reduce heat, stir in polenta, cover, cook over low heat for 10 minutes, stirring occasionally.
Remove from heat, stir in sultanas, walnuts and cream.
Pour into prepared tin, top with apple
Pour syrup over apple.
Sprinkle with combined sugar and cinnamon.
Bake in moderate oven for about 35 minutes or until apple is tender and flan has come slightly away for side of tin
Cool to room temperature, remove from tin, serve with extra maple syrup.
