Is WIC asking for this info, or do you just think that you need to provide it? When I was on WIC they only made us have proof of income, and any other types of income such as: child support or alimony. If it was given as a gift or it is not income, then you should not have to write it down or claim it.

If you still need to write the letter, just make it simple and state that due to your unemployment, she has been required to help you out financially by paying bills, rent, and buying groceries.
