OK, this one doesn't use canned beans and campbells (urgh). It is quite easy but you know what went into it- no artificial stuff or excess salt.
-Green beans, trimmed
-Mushrooms, sliced
-Creme fraiche
-Chopped onions
-Mixed herbs
-A splash of liquid-boullion (the concentrated stuff)
-Butter/oil for frying
You need a lidded frying pan you can put in the oven (with a lid) and a small sauce pan.
1) Trim the beans and steam/boil them in the small pan until almost cooked through. Drain and set aside.
2) At the same time (in the oven-pan), fry the onions and mushrooms gently. Onions first, when they start to soften, add the mushrooms.
3) When the mushrooms start seeping their 'juice' into the bottom of the pan, add the drained beans and stir-fry to coat with the mushroomy-juice and oil.
4) Add the creme fraiche and stir through. Add the herbs (about a spoon).
5) Check the taste- add the boullion if it is bland (just a drop or two)- if you have not bouillion, soy sauce or salt and pepper).
6) Cover and put in a medium hot oven for 25 mins.

Green Bean Casserole:
Vegetable cooking spray
1/4 cup finely chopped onion
2 tablespoons all-purpose flour
1 cup skim milk
1/2 cup (2 ounces) shredded reduced-sodium, reduced-fat Swiss cheese
1/2 cup low-fat sour cream
1 teaspoon sugar
1/2 teaspoon salt
2 (9-ounce) packages frozen French-style green beans, thawed and drained
1 1/2 cups herb-seasoned stuffing mix
2 teaspoons margarine, melted
1 egg white, lightly beaten
Coat a medium saucepan with cooking spray, and place over medium heat until hot. Add onion; saute 5 minutes or until tender. Add flour, and cook 1 minute, stirring constantly. Gradually add the milk, stirring until blended. Stir in cheese, sour cream, sugar, and salt; cook 5 minutes or until thickened and bubbly, stirring constantly.
Place green beans in an 8-inch square baking dish; pour the sauce over beans. Combine stuffing mix, margarine, and egg white in a bowl; stir well, and sprinkle over green bean mixture. Bake at 350° for 25 minutes or until thoroughly heated.
Yield: 8 servings (serving size: 1/2 cup).
