I live in North Carolina and I was driving down the road this morning looking at all the beautiful fall leaves, and I was just wondering, Do the leaves change colors even in places where it stays hot all year long?

the plain answer is yes
the change of color is due to less light during the day, and not temparature, it just happens to be that the places that have the most light variations are closer to the poles, hence even in heated greenhouses, leaves darken in winter

The leaves that change colors are those that lose their leaves in the winter months. It is a recycling of sorts, as the chlorophyll is withdrawn into the tree to be saved or another season and the other colors that were there all along can then be seen. Then the trees lose those leaves. In hot climates the trees do not lose their leaves all at once.

It depends on the sunlight and warmth, so no, in some places they stay green.
