The way I like to fix them:

Please note: That the amount of each ingredient is to taste and depends on how many scallops and what size they are. There are tiny ones that will cook very fast and there are large bay scallops which take a bit longer. This recipe is for the larger scallops.

Combine olive oil (about 1/4 cup), garlic and a little salt and pepper. Marinate scallops in mixture for 30 minutes. (A ziploc bag works great for this.) Then pat scallops dry (this is important in order to get a good browning/crust). Heat a little (enought to make a thin layer) olive oil in a pan on medium high heat until the oil shimmers. Place scallops down in hot oil and do not move them for 2 - 3 minutes. When ready to turn, wiggle them slightly with tongs before turning, to make sure they are not sticking to the pan. Then turn and let cook on other side for a minute or two. You can squeeze fresh lemon over the top as they come out of the pan. Enjoy.

Scallops cook quickly...here are a couple of my favorite ways to prepare. Wrap scallop in a half a piece of bacon, secure with a toothpick and broil until bacon is done--yummy appetizer!

Scallops Harborside Style
1 pound fresh or frozen bay or sea scallops
4 tablespoons butter, melted
2 tablespoons dry sherry
1/3 cup soft cracker or bread crumbs
Dash garlic salt
1/8 teaspoon paprika
1/8 teaspoon dry mustard (optional)

Preheat broiler.
If using large sea scallops, slice horizontally through center. Add sherry to the melted butter. Put 2 tablespoons of the butter/sherry mixture in shallow baking pan and arrange scallops in single layer. Combine crumbs and seasonings and sprinkle over scallops. Drizzle remaining butter/sherry over scallops. Broil about 5 to 7 minutes. Serve hot with lemon wedges. Serves 3 or 4 as a main course, 6 to 8 as an appetizer.

It takes just a few minutes to cook scallops on one side then flip the scallop over and you should see its bottom lightly browned. Let it cook for another minute or two and then remove from heat. If you're not sure if it's done, you can try cutting one open. It should look like it is just on the verge of losing its translucence on the inside, and it'll lose it completely in a few minutes even when removed from the heat. You can also use the jiggle test: if you tap it with a fork in the pan and it jiggles, then it's done. If it's raw, the shock wave from the tap gets absorbed by the uncooked middle. Cook in butter or olive oil to pan sear. Or you can cook them on the grill they are great with a smoked taste.

Here's a lovely recipe for ya...

"Scallops in Garlic Cream Sauce" - Serves 4

1 1/2 lbs. scallops
3 tbsp. butter
2 cloves garlic; crushed
3 tbsp. chopped parsley
Salt and pepper
1/4 cup cream

Melt butter in a pan; add garlic parsley, wine, salt and pepper. Cover; simmer 15 minutes. Add scallops; simmer 5 minutes. Uncover and stir in cream. Heat, but do not boil. Serve immediately.

My seared scallops are done on med-hi to high heat, a few minutes per side until seared, then adding the cream, and when that's heated through, they're done.
