I've never tried this, but only seen it on TV with regular potatoes. But you might be able to make it work.
First, slice the sweet potatoes very thinly with a mandolin (kind of like a grater, but for slicing). You want regular slices. Salt them (about 1 tsp. salt per cup of potatoes) then let them sit for about 10 minutes. They should be nice and floppy by now, so squeeze them out. (If they aren't, maybe they don't have that much moisture, and you can go on.)
Grease a frying pan (or better yet, a cast-iron skillet) with olive oil, then pre-heat. Turn the heat to low, and layer the potato slices so they overlap. There should never be more than two or three layers in one place. Let it fry on low until the bottom is nicely crisped. Put on a little of your favorite tomato sauce, any light toppings (delicacy is the key with such a thin crust) and grated cheese. Cover with the lid, and let heat on medium until the cheese is melted.
Slide onto a cutting board and slice into wedges.

Potato Pizza Dough Recipe
You need:
250 grams boiled potatoes
¼ cup butter
1 cup self raising flour
½ tsp salt
Sift together the flour and salt
If the potatoes are warm (or hot), mash the potatoes well, till they become an even paste and add the butter, then leave to cool. Add this flour salt mixture to the boiled potatoes and mix well together to form a soft dough.
If the potatoes are cold, mash them well and leave aside. In the flour salt mixture, rub in the butter with fingertips to a breadcrumb consistency. Then stir this into the mashed potatoes to form a soft dough.
This base can be used for making pizzas immediately. If you do not need it right away, then cover with a cling film and chill for up to two hours.
(A very special topping for a potato pizza base would be the Marinara topping - a cocktail of mixed seafood – prawns or shrimps, mussels, cockles and squid)
Boiles potatoes ans sweet potatoes are of the same consistancy so why don't you substitute sweet potatoes for regular pota toes and try this recipe out.?

½ cup milk
Crush potato and spread on base of a 10-inch pizza pan. Place in a 350 degrees F. (180 degrees C) for ten minutes, then put your sauce on.

Me? I just like cheese. But I cant stand it when I see people pour, yes pour Ranch salad dressing on a already grease laden pizza. So, its not really a topping, but anything with ranch dressing. Oh wait. I just thought of a pizza my brother in law ordered in Germany, called a meerfruchte. It has lots of different sea food on it, including baby octopus. My German husband always orders a pizza with a sunny side egg in the middle. Then again, I always thought pizza should be offered for breakfast when I was ditching high school years ago! But I prefer my eggs seperate.

sweet potato can be quite watery.try a scone mix ,and add mashed sweet potato. dont use any liquid to mix, shape by hand on a baking sheet than add toppings.
