Here's the recipe for those who asked for it. Looks like they have salsa as a side dish.

MEXICAN CORN BREAD Serves 6 to 8.
2 eggs
1 c. whole kernel corn
1 tbsp. baking powder
1 c. sour cream
1/4 c. butter, melted
1 c. corn meal
1 1/2 tsp. salt
1 c. grated
Cheddar cheese
1 can (4 oz.) chopped green chiles

Beat eggs, add corn, baking powder, sour cream, butter, corn meal and salt. Stir until well blended. Pour half batter into a well greased ring mold. Place the chilies and 1/2 cheese over batter. Add remaining batter and top with rest of cheese. Bake 12 to 14 minutes in 3 minute intervals turning dish 1/4 turn. It's done when mixture pulls away from sides and top with rest of cheese. SPANISH RICE
1/2 lb bacon, cut up in bite-size pieces
1 onion chopped
1 cup rice
1 can diced tomatoes
1/2 cup water
2 teaspoons salt
1 teaspoon cumin
2 teaspoons garlic
1 teaspoon chili powder

In a large saucepan, fry bacon until crispy. Add onion, rice and spices. Fry until rice is lightly browned and onions are nearly clear. Add diced tomatoes and 1/2 to 3/4 cup of water. Bring to a boil. Reduce heat and simmer for 20 minutes or until rice is tender.

SPANISH BEANS
1 can, Goya pink beans, drained and rinsed
1 can, Goya Black beans, drained and rinsed
1 can, pinto beans, drained and rinsed
1 (No. 2) can lima beans
2 potatoes, diced
1 onion, chopped
1 green pepper, chopped
2 tbsp. butter
2 c. strained tomatoes
Dash of salt, pepper & cayenne
1 tsp. Worcestershire sauce

Salt & pepper to taste
2 tbsp. olive oil
Empty beans into cooking pot. Add oil, potatoes and condiments. Salt and pepper to taste. Add tomato sauce. Bring to a boil, then simmer for 30 minutes. Serve with or over Spanish rice or eat alone. You could use regular beans that have been soaked overnight for tenderness.

Most Mexican dishes around here come with both refried beans and Mexican rice. But the Mexican rice has green chiles in it and it's so good. And the beans have extra manchego melted on top. Very filling.

I'd like the enchilada recipe as well. Sounds good!!!!!

A good side might be spanish rice.

I would try spanish rice, Homemade Refried Beans or someother rice dish. Maybe even a spaghetti dish.

hmmm that sounds real good - can i have the recipe?

side dishes - black bean and corn salsa (easy to do, can of black beans, can of corn, chopped onion and red pepper (or green if you prefer), picante sauce, garlic powder, lime juice. mix well but gently. sprinkle chopped avacado on top. serve with chips!

corn cake....sounds nasty I know. I am one of the pickiest eaters, but i love that ****! my sister in kaw makes it all the time. I think its just cream corn & this mix, it says corn cake on it, then you mix the two together & bake it. ITS GREAT!
