rises and the sugar caramalised, does anyone know what these are called and have a proper recipe for me i am dying to try them

This is as close as I could get for what you may be looking for. ... Have a blessed day! I can smell them cooking already... I'll come for a taste and a cup of JOE!

SUGAR CRUSTED BISCUIT PUFFS

1/2 c. chopped almonds or filberts
1/4 c. raisins
1 tbsp. butter, softened
1/4 c. sugar
1 to 3 tsp. grated orange peel
1 egg, separated (reserve white for topping)
2 tsp. Marsala wine or rum

PASTRY:

10 oz. can refrigerated flaky biscuits

In small bowl, combine all filling ingredients. Separate dough into 10 biscuits; press or roll each into 4-inch circle. Spoon 1 tablespoon filling onto center of each circle. Fold dough over filling, covering completely; seal well, shaping into balls.

TOPPING:

Reserved egg white
1 tbsp. Marsala wine or rum
1/3 c. sugar
1/4 c. chopped almonds or filberts
1/2 tsp. cinnamon

Combine reserved egg white and wine; beat until foamy. Combine 1/3 cup sugar, 1/4 cup chopped nuts and 1/2 teaspoon cinnamon.

Dip top and sides (not seam) of each filled biscuit in egg white mixture, then in nut mixture. Place seam-side-down on ungreased cookie sheet. Bake at 375 degrees for 12-16 minutes or until golden brown. Remove from cookie sheet immediately. 10 pastries.

Tip: If desired, anise powder can be substituted for cinnamon. May use walnuts or pecans in place of almonds.

Here is a recipe - not exactly what you spoke of, but would be easy and work. You could also probably just brush a thawed package of puff pastry with butter and sprinkle a cinnamon sugar mixture on that, roll, cut into slices, place in baking pan or on a backing sheet and bake. When using puff pastry you usually pre-heat the oven to 400 degrees and bake for the first 5 minutes on that temp and then drop the temp to 350 for maybe 5 -10 minutes more. Look at the directions on the pastry box. Good luck!

INGREDIENTS
1 sheet frozen puff pastry, thawed
1 (8 ounce) package cream cheese, cubed
1 tablespoon butter
1 tablespoon ground cinnamon
1 tablespoon vanilla extract
1 (16 ounce) package cream cheese frosting
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Spray a 9x13 inch baking pan with cooking spray.
In a saucepan, melt butter over medium heat. Add cream cheese, cinnamon, and vanilla to pan, and stir until smooth. Remove from heat, and cool for 5 minutes.
Spread cinnamon and cream cheese mixture over puff pastry. Roll puff pastry into a log, and pinch ends together to keep filling inside. Place roll in prepared pan.
Bake in preheated oven for 35 to 40 minutes, or until golden brown. Remove from oven, and spread cream cheese frosting over warm roll. Serve warm or at room temperature.

do you mean turnovers? They are usually made with a puff pastry and have fruit filling added to them and the sugar on top.

Are you referring to "elephant ears" by chance? They are a puff pastry that is very flaky and sweetened and are considered cookies!
