best way to feild dress a deer is use a gut hook knife make sure you dont stick the knife too far in so you dont cut the deers guts openthen use the gut hook take it all the way to the neck reach up into the cavity grab the wind pipe as far up as you can cut it lose then roll it over on it side pull out the guts then down around the gentals you need to split the pelvic bone enough so you can pull the bladder( try a saw or hatchet) out try not to get any of it on the meatthen cut the anus out then the guts will come right out
then take it home and try to get it in the freezer depending on the weather if its cold not that big of deal but try to keep the meat
clean and dry as you can those are the top two reasons meat spoils i think before you try it you should try to find a video that walks you through it

ive found this to be the easiest way of field dressing.
1. Have the deer located close to a downward slope of a field , creek or embankment.
2. Spread the rear legs apart and make an incision just below the anus , making sure not to puncture the stomach lining.
3. Use of a gut hook knife works best but any SHARP hunting knife will work, slitting the skin up to just below the chin ( unless you are going to have the deer mounted then field dressing is a little bit different) I go to below the chin because this make removal of the esophogus alot easier and cleaner.
4. Cut the skin around the anus and remove, using a small hatchet split the pelvic bone apart, again being carefull not to cut into the bladder tube.
5. Spreading the ribs open carefully cut the stomach lining away from the rib cage are, again being carefull not to cut into the guts.
6. Roll the carcass over towards the downhill slope and with little pulling the guts will just roll out.
7. if your like me and eat the heart and liver seperate these organs from the gutsac and put in a ziplock baggy.
8. I ALWAYS carry 2 gallon jugs of water in my truck so i can wash the inside of the deer out and dry with an old towel
9. For a couple of dollars you can buy a cloth wrap from Wal Mart to cover the deer to prtoect it from bugs and dirt.
10. Also i cut out the inner back tenderloins from the inside rib cage and eat them for breakfast, removing them now lessens the chance of them drying out while your deer is hanging and aging.
11. If its warm out I always stop at the quickie mart and buy a couple of bags of ice to place inside the deer carcass to aid in cooling it quicker.

word to the wise. It isnt nesseccary to de-gut the dear. just skin it, quarter it, and cut out the tenderloins. this way you dont have to deal with a big mess that stinks. the only negative is the deer ways more.

Hang him on a strong limb by his hind feet,
Cut his throat, to bleed him,
Slit his tummy, Take insides out.
Skin and Pack on ice if Possible.
