i like cooked stuff on sandwiches. i keep crushed tomatos in the fridge just for sandwiches. they are easy to make. you just boil tomatos for about 10 mins and then skin them and put them back in the pot and smash them up over medium heat til most of the liquid is gone. even just crushed tomatos on toast is good. you can keep pre-fried onions around too. just fry up slices of vidalia or other sweet onion in some olive oil. i think these are a lot better than raw veggies in sandwiches.

Why not pop down to Asda or Morrisons. They do quite a few different sandwich fillings and you dont need to put butter or marg on. They do things like chicken & sweetcorn, chicken & bacon, corned beef & onion, chicken tikka, tuna & sweetcorn and more
