It was lovely. Does anyone have a recipe for this?

Category Soups: White Onion Soup

Serves 4-6
Ingredients
2 tablespoons butter
1lb (450g) onions thinly sliced
2 cloves
2 tbsp flour
1 teaspoon ground nutmeg
1 bay leaf
½ pint (300 ml) (milk
2pts (1 litre) chicken or vegetable stock
salt and pepper
¼ pint (150 ml) cream
2 tablespoons grated cheese (optional)

Method
Gently cook the onions and cloves in the butter till the onions are soft but not coloured.

Sprinkle over the flour, mix well and cook, stirring, for a minute or so, and then add the bay leaf and stock. Stir until it starts to boil

Simmer until the onions are cooked, about 30 - 40 minutes, add the milk and remove the bay leaf and cloves

Liquidise.

When ready to serve, add cream and reheat gently without boiling. Serve topped with grated cheese

Creamy Onion Soup

4 tbl butter
2 lb onions thinly sliced
4 cup vegetable or chicken stock
3 cup whipping cream
Salt to taste
Freshly-ground white pepper to taste
STILTON TOAST
6 slc French bread - (thick)
2 oz Stilton cheese
2 tbl butter
2 oz Cheddar cheese grated

Toast 6 thick slices of French bread in a 300 degree oven until crisp. Blend the Stilton with a couple tablespoons of butter, then spread on the toast. When ready to serve the soup, pop one of these on top of each serving bowl and sprinkle with lots of cheddar cheese.
Melt butter in a large saucepan over low heat. Add onions, cover, and cook until translucent - stirring occasionally - for about 30 minutes. Add the stock and bring to a boil. Reduce heat and simmer for 15 minutes.
Add cream and bring to a boil. Reduce heat and simmer to thicken slightly - about 15 minutes. Season generously with salt and pepper.
Ladle into bowls, top with Stilton Toast, and run under the broiler until the cheese is melted and brown. Serve immediately.
Serve hot as lunch or light dinner (with accompaniments) to 6 people.

No but, since leaving England I have had Pumpkin, Potato and even Bread soup ALL were really nice, I expected them to be pooey
