Often raisins, cherries and choc-chips sink when I bake sponge cake. Is there a method to avoid this happening? Is it to do with when to add them, or am I baking them too fast/hot?

This is a standard british (from a 'Victoria' basic) sponge cake- items should be distributed throughout the cake, not at the top OR bottom. That type of cake is usually called (in my experience) 'upside down cake' and is a sponge pudding.

hi i always flour any ingredient before adding it then just add it in at normal time and cook at the normal temp always works

Can't see how that would happen. Sponge cakes are supposed to be baked up-side down -- like a bundt cake. Place your fruit in the bottom of the pan, and pour your batter over it. Bake it up-side down, and everything is at the top when you remove the cake.

I have not tried this but have heard that you should wait and put them in later, like just before you put into the oven. I have heard the dredging in flour first also but have not tried it either.

put them in a bowl of flour first and then take them out.....some flour will stick to the items and this will prevent them from sinking.
