Carbonara Sauce
Beautiful and rich and creamy.

4-6 servings
1 onion, chopped
1 garlic, crushed
4 slices prosciutto
2 eggs
300 ml cream
salt and pepper
1/2 cup parmesan cheese
500 g pasta

Sauté onion, garlic and prosciutto.
Mix cream, eggs and S&P together.
Mix all together and bring to boil. Add parmesan and stir until melted.
Mix in cooked pasta and serve with parmesan.

Ingredients
For the pasta
6 tbsp plain flour
3 eggs
salt and freshly ground black pepper, to taste
For the tomato sauce
2 tsp olive oil
2 garlic cloves, crushed
½ tin tomatoes
1 tbsp fresh basil, chopped
1 tbsp fresh parsley, chopped
For the carbonara sauce
1 tbsp olive oil
3 slices pancetta
1-2 tbsp double cream
1-2 tbsp fresh parmesan, grated
1 egg yolk
For the pesto
1 clove garlic, crushed
3 tbsp basil, torn
5 tbsp olive oil
2 tbsp fresh parmesan, grated
salt and freshly ground black pepper, to taste



Method
1. For the pasta, place the plain flour into a food processor with the eggs. Pulse until combined.
2. Remove from the processor, and knead on a clean surface.
3. Using a pasta machine, carefully pass the pasta through the rollers, gradually reducing the increments as you go, to produce good strong, long pasta.
4. Finally place through the cutting rollers, to produce spaghetti.
5. Heat a large pan of boiling water over a high heat.
6. Add the pasta to the pan, and cook for 2-3 minutes, or until al dente.
7. Remove from the boiling water and drain thoroughly, before dividing the pasta between the three sauces, to serve.
8. For the tomato sauce, heat the olive oil in a small pan, over a medium heat.
9. Add the garlic, and sauté for 30 seconds, before adding the tomatoes.
10. Cook for 5-6 minutes, before adding the chopped herbs. Stir well, then add one-third of the spaghetti.
11. Toss well, to serve.
12. For the carbonara, heat the olive oil in a small frying pan, over a moderate heat.
13. Add the slices of pancetta to the pan, and fry for 2-3 minutes, on each side, or until crisp and golden.
14. Meanwhile, place the double cream, parmesan and egg yolk into a small bowl. Stir well.
15. When the pasta has cooked, add one-third of it to the bowl, stirring well to combine.
16. Spoon onto a serving plate, or bowl, and place the crispy fried pancetta slices on top, to serve.
17. For the pesto, place the garlic, basil, olive oil, parmesan and seasoning, to taste, into a small processor. Blend until all is well combined and smooth. Pour over one-third of the cooked spaghetti, to serve.

Brown some pancetta or chopped smoked bacon in some butter, boil the spaghetti, drain it and keep a little bit of the pasta water. Return it to the cooker, with the heat off and add 3 eggs, mix into the spaghetti, add the bacon and the melted butter and all the yummy bits from the frying pan and chuck in a whole load of freshly grated parmesan. If not saucy enough for you, add a bit of the cooking water. Add black pepper and serve xxx

the sauce for carbonara does not include cream as many people think. for 2 portions cook off 50g of onion, then add mushroom and bacon( bacon is not in the original carbonara). for the sauce you need to whisk 2 medium eggs and 1 egg yolk together. so you cook your onion, bacon, mushroom and pasta then add them to your whisked eggs in a plastic bowl. it should scramble slightly and there you have traditional style carbonara sauce

i have a really really cheap lovely version the kids cant get enough of it
cook 1 packet of bacon in a pan with one onion a 2 cloves of crushed garlic add plenty of pepper and then add as meny mushrooms as you want once this has cooked add 4 cheese triangles and mix to this add milk until you get a sauce
not quiet carbonara but a cheap yummy version

Is that supposed to say boil instead of bowl? You have to heat it gently and do Not boil. Heat the cream. And then temper it into the eggs, by slowly adding 1/3 of the heated cream to the well whisked eggs. Vigoresly whisking the eggs the whole time. Then add the cream and egg mix back into cream, and heat on low, add the parm and heat/stir until melted. I would find a different recipe anyways. 2 eggs for that amount of cream is going to be Very eggy.

Well i can't give you a posh one, but i can give you cheap, easy and ready in 10 minutes!!

soften 1 onion and 1 clove of garlic,
add quartered mushrooms, and chopped ham,
pour in carton of double cream,
add a bit of lemon juice to make it less sickly!
