Chicken Gravy
Ingredients
Chicken cut into 1" pieces - 2 lbs
Red Chillies 7-8
Onion - 2 medium size
Ginger - 1 1/2" size
Garlic - 1 full big size
Coriander leaf - handful
Coriander powder - 2 tsp
Cloves - 7-8
Cinnamon stick - small size one
Somb - 1 tsp
Tomato - 2 small size
Turmeric powder - 1/4 tsp
Lemon1
Chicken Masala - 1 tsp
Salt to taste.
Method
Grind Onion ginger, garlic, chillies, coriander leaf, cloves, cinnamon stick, somb and keep aside.
Grind tomato separately.
In a cooker pour little oil and fry onions till golden brown, then add the grounded masala. Once it is done add tomatoes and stir for 5-6 minutes.
To this mixture add coriander powder, turmeric powder, chicken masala, lemon and salt.
Add chicken pieces and cook for 25 minutes.

Chicken or turkey gravy is made simply by roasting the chicken and keep basting with a liquid generally water , chicken stock, or white wine. Then remove the bird, put the stove top receptacle on top of the burner and heat up adding more stock to obtain required volume. You can either thicken it with corn starch, arrow root, or a rue (butter and flour mixture). I prefer the rue because it is very simple to reheat and it won't clump when making it. Corn starch has to be mixed with water to form a slurry, then remove the gravy pan from heat source, add slurry and stir well, then return to heat and bring to a boil for a minute or so to obtain maximum thickening. Arrowroot is basically the same steps as corn starch except that it does not reheat well the next time! Also with the rue, you can add on the heat so if your consistency is not right you simply add another dab of rue and continue doing so until desired consistency is obtained.

Chicken Gravy
Ingredients :
Chicken - 300 gms
Onion - 1
Tomato -1
Clove - 2
cinnamon -2
cardamom - 2
Ginger & garlic paste
Garam Masala powder- 3 tsp
Chicken Masala powder - 3tsp
green chillies - 3
Coriander powder - 3 tsp
pepper - 1 tsp
Coriander leaves
Mint Leaves
Curd - 8 tsp
Preparation :
Heat 200 gms of oil in a pan, add the cut onions add the spices, ginger & garlic powder, green chillies.
Add the tomatoes, after the tomatoes are well fried add the cut chicken, fry them add coriander powder & salt.
And let the chicken cook well with the water in the paste and the water from the tomato.
Reduce the flame and let the chicken cook for 40 minutes.
Add the garam Masala and chicken masala powder, red chillies.
Finally add the curd and bring it to a boil and close the stove
Then add the mint leaves and coriander leaves .
serve hot with rice/chappathis
Tip : Don't add extra water to cook the chicken .
You can also add some lemon at the end to enhance the taste

Old-Fashioned Chicken Gravy
2 tbl Butter
1 tbl Flour
3/4 cup Chicken stock
1/4 cup Light cream
Salt
Pepper
1. Pour the frying fat from the pan, replace it with the butter, melt, then stir in the flour. When bubbly, stir in the stock and cream, and cook until sauce thickens. Season with salt and pepper.
2. Serve the sauce separately to spoon over the chicken pieces at the table.

The easy way is when you make mashed taters, save the tater water. Add the chicken drippings and some chicken soup base or boullion to taste. Fill a cup half full of water and stir in some corn starch, then pour into the gravy to thicken it up. There you go! Good luck!

FAST FRIED CHICKEN WHITE GRAVY
4 cups whole milk
1 cup cream
1/2 cup butter
1/4 cup flour
1/8 cup diced chives
1/4 cup finely chopped onion
1 tablespoon salt (to taste)
1 tablespoon pepper
3 chopped cloves of garlic
a pinch of sage
In a large saucepan cook onions, chives, and garlic in the butter until onions are translucent. DO NOT BURN BUTTER.
Add flour; stir for about a minute. Quickly whisk in milk and cream. Add salt and pepper to taste.
Whisk gravy constantly until it becomes thick and creamy.
Great with fried chicken, potatoes, pot pie fillings, and many others!

Why are all these people putting tomatoes into chicken gravy????
If you are having fried chicken and mashed potatoes do this:
Flour your chicken, fry in skillet with garlic powder, onion powder, salt and pepper. Place chicken in warm oven and remove all but a few tablespoons of fat drippings from the skillet. Throw in a handfull of flour, mix it into the drippings and brown. Add the potato water and stir until thickened.
If you're not having fried chicken and mashed potatoes you can always warm a pot of canned chicken stock or hot water with chicken boullion added and thicken with cornstarch.
If you are my husband you can open a can of chicken gravy.

To prepare chicken gravy for 500 gms of chicken:saute 2 finely chopped onions add 1 tablespoon of ginger garlic paste,2 tablespoon lime juice, few curry leaves,1 cup of tomato puree,2 bay leaves and allow to simmer add 1/4 cup of plain youghurt and bring to boil.

It is very easy and my special dish too.
1. Chop onions and tomatoes.
2. Make ginger and garlic paste.
3. Pour oil and add all the basic items like mustard etc.
4. Fry onions and tomatoes nicely. (brown color must come)
5. Add the ginger and garlic paste to it and fry it till the odor comes nicely.
6. Then add chicken pieces and fry for some time.
7. Then pour water and add chilli powder according to your taste.
8. Don't forget to add turmeric powder and salt.
9. Close the pan.
10. Stir the dish often.
11. Check whether it is completely cooked and that's it.
Superb chicken gravy is ready to serve now.

Fry onion, ginger and garlic paste in oil to which bay leaves and sabut garam masala have been added. Add turmeric powder, salt to taste and mirchi powder. Add fresh chopped tomatoes and chicken. Add a little water. Cover and cook till chicken is done. All the best.
