To dogs it is just another odor there is no good or bad scents. The smellier it is the better they like it and it usually has some meaning to them though we don't understand. People are the ones who tag names to what they roll in. Nothing is rank, nasty or disgusting to a dog.

Sometimes dogs will roll in the grass or in something smelly right after getting a bath. Some dog shampoos have perfumes that may be pleasant to humans but smell awful to the animal. It is just an effort to mask the unpleasant and un-dog-like odor.
Wolves will often roll in decomposing carcasses or the feces of plant eating animals or herbivores. This would mask their own scent and enable them to sneak up on their prey without detection. It could even fool members of the other species into accepting it as one of their own. This ancient instinct may have carried over to domesticated dogs.
Another school for thought is that dogs may roll in smelly things to 'advertise' what they have found to other dogs.

I just wrote an answer recently about my beagle when I was a kid. He killed a wolverine that attacked me and then dragged the poor carcass around for a decade until it was flat and black and really horrible. He rolled in it and smelled sooooooo, soooooooo bad. But, I wouldn't let anyone take it away from him. He earned whatever pleasure or need he derived from it. And, he left it outdoors for the most part except once when a grandmother slept over he brought it to her bed at night as a token of his affection for her. When I left home for college, my mother quietly got rid of it.

When we lived in Kentucky we had 2 dogs. It was deer season, and they would go into the woods and roll around in gut piles. Pee-whew! We gave them a bath, then the next day they would do it again! Needless to say, they became outside dogs. It is disgusting, but I think it is in their nature to seek out things that stink. I knew a girl once that would let her dog lick her mouth, and she thought it was so cute! Gag!

not always, my female rolls in stink but the male just rolls in leafs and non smelly stuff.

They are hiding their scent so they can hunt without being smelled by their prey. It's an instinct.
