I have always puzzled about this, the icecream is so cold and icecremy, yet the sponge is sponge like and unfrozen?? why??

one factor could be that the spongecake should contain enough water to freeze. another couldbe that theres some jam separating the icecream from the sponge.

the thing is it does freeze!!
you have to take it out of the freezer before you eat it.....you dont eat it straight from the freezer. therfore the sponge has time to defrost enough!
