INGREDIENTS
2 cups shredded potatoes
1/4 cup grated onion
1 egg, beaten
1 teaspoon salt
1 tablespoon all-purpose flour
1 1/2 tablespoons olive oil
1 tablespoon vegetable oil
1 onion, chopped
2 cloves garlic, minced
salt and pepper to taste
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
1 head cauliflower, coarsely chopped
1 1/2 cups shredded Cheddar cheese
2 eggs, beaten
1/4 cup milk
1/4 teaspoon paprika
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C). Grease a shallow 9 inch baking dish or pie pan.
To make crust: Use a cheese cloth to squeeze extra liquid from the grated potatoes. In a medium size mixing bowl, combine potato, onion, egg, salt and flour. Transfer the mixture to the prepared pie pan, and pat it down with a rubber spatula or your fingertips. Bake for 30 minutes. Brush the crust with oil, and bake for another 10 minutes. Remove crust from oven, and reduce the oven's temperature to 350 degrees F (175 degrees C).
To make the filling: In a large frying pan over a high heat, heat the oil until hot. Reduce the temperature to medium and saute onion, garlic, thyme, salt, pepper and paprika in the hot oil; cook for 8 to 10 minutes. Stir the cauliflower into the pan and cook for 15 minutes.
Spread 1/2 of the cheese onto the potato crust. Spoon the vegetables on top of the cheese. Sprinkle the remaining cheese over the sauteed vegetables. Beat the milk and eggs together in a small bowl, and then pour over the vegetables and cheese. Sprinkle paprika over the mixture.
Bake for 35 to 40 minutes, or until the custard is set and the top of the pie is slightly browned.

Its cheese and potato pie and is basically mashed potato with lots of grated cheese mashed into it so it melts through. You can also put some diced cooked onions throught the mash.Put in an oven proof dish, top with some grtated cheese and slices of tomato and cook Gas mark 6 for approx 30 mins.
Lovely with baked beans.

The cheese pie that was served at the school I went to in the late 1980's was just mashed potato with grated cheese and bits of onion mixed in.

I make cheese pie with mashed potato (chop an onion and boil that with the onions) and lots of grated cheddar cheese (add mustard if you like). Pop in the oven for about 25 minutes and hey presto! There's no pastry but you can always make some shortcrust pastry and line your baking dish with this (bake the bottom blind first).

I remember this! It used to have sliced tomatoes on top sometimes.
The best recipe to follow is one for the French quiche lorraine. Sounds posh but you really can use the egg/cream/cheese filling along with a wide variety of other ingredients. Bacon is traditionally but I have used smoked fish. Also try using a blue cheese with broccoli.

roll out Short crust pastry enough to line an oven proof dish that has been greased with margarine
whip together 4 eggs 2 pots of sour cream 1 pot of creme fresh
add 6-8oz of grated emental cheese (YUM)
pinch of whatever herbs you like pinch of salt and pepper
now you can add any veg you like or just leave it plain
por mixture into dish on top of pastry
bake at 180 for 40-45 mins grated Cheshire cheese on top for the last 10 minutes and thinly sliced tomatoe or courgette or both
serve with salad and coleslaw

i do mine with mashed potatoes onions and as much cheese to ur tasting then bake in the oven ( add herbs if you like )
