its sat in the fridge and i wondered if anyone had nice recipes, cheers.

Shove it inside a chicken breast and cook for 40 mins ...... drizzle with redcurrant sauce and serve with new potates and baby veg !!! YUM !!!

1) Mix with cooked vegies, (any kind), mix in an egg ang put into the oven for a few minutes. This makes a great vegie pie.
2) grate into soups.
3) grate over pasta
4))Brie omellettes.
5) Use in any recipe that calls for parmesan (instead of parmesan)
6) Brie sandwiches with fresh vegetables
7) smorgadsbord

Just a few suggestions without thinking. There are many more

You could try baking it in the oven. Went to a friend's house recently and she'd used camembert to do this and it was delicious. I think it would work just as well with brie or any other soft cheese. You just press finely sliced bits of garlic clove, bits of fresh rosemary and finely sliced lemon zest at random into the cheese, wrap it in foil and bake it on a fairly low heat until it's runny. When it's ready, serve it with crusty bread to dip into it. Yum.

Make a salad with mixed leaves, spring onion and balsamic vinegar. Grill some smoked bacon and cut into pieces. Cut the brie into cubes and toss it and the warm bacon through the salad - yummy !

Buy some puff pastry.

Cover cheese with pastry , eggwash and bake in 180 degree preheated oven for 25 - 30 minutes. Serve with salad.

You could breadcrumb it, then deep fry it till the breadcrumbs a re golden which wont take long. Serve with cranberry sauce and some warm baguette.
