Hi - I'm a high school student in California. Unfortunately, there's no real easy answer to your question - California is a big state, and there is a wide range of schedules that are used throughout it. Your best bet is probably to find the website of the specific school district that you're interested in, and go from there.
Personally, I am in the Los Angeles Unified School District, which employs two calendars. On the traditional schedule, students have a summer break from June to September, a two-week winter break in December-January, and a one-week spring break. However, we also have a track system, in which two-thirds of the school is in attendance at any point during the year. On this schedule, Track A has two-month breaks in the summer and winter, Track C in the spring and fall, and Track B goes on and off for two-month periods throughout the year.
I know this doesn't entirely answer your question, but I hope I was at least able to provide you with some sort of insight into what you were wondering.
