To get an answer to this question you have to think like a cat.
First of all in a household you have natural hazards: dogs, little children, water and other dangerous stuff.
So the backs of chairs can protect you from these threats, it's simple... Furthermore it's very cool, no one else can do it.... think about it.

My cat sleeps on any part of the chair. Cats don't generally sleep at the back of the chair. If anything, cats like to be high up on something, like a window sill,or even a chair, at any part.

Think about it this way: In the wild, the big cats sleep in trees with their limbs hanging off the branches. It's high which means that they cannot be attacked when snoozing. It's the same with the domesticated cat. He just finds it better to sleep in higher locations than lower for the fear of being attacked. It's the animal instinct of a cat and it shows through.

Cats sleep where they feel comfortable at the moment. I have cats and they sleep in various places. Your cat might like the back of that chair because it puts him closer (either physically, or by smell) to someone he loves who uses that chair frequently.

it simulates the branches of a tree from the African wild where they originated. they like to look around the place and be able to at a moment's notice to jump down and hide somewhere. and if you think about it, sleeping on a the seat of a chair is very dangerous. would you sleep somewhere where someone 10 times your size could sit on you at any minute without notice??

Cats like to have a high vantage point where they can see more. And not all cats do that, I have one that will sit in the seat.

Cats sleep in funny places...mine has 2 cat beds...and prefers to sleep in a brown paper grocery bag...go figure

Not just backs of seats, but it appears anywhere where it is precarious, because our moggy has had quite a few startled tumbles in his time.

sometimes i sleep in the bathtub... my cat sleeps where she can see her dish... i like the bathtub because in the morning i don't have to get out of bed to go take a shower
