Hands down my favorite way to cook steak is with a cast iron skillet. First heat the oven to 500 degrees. While you're waiting apply a thin layer of a high smoke point oil (I usually use canola) to each side of the steak and then rub with Kosher Salt and plenty of freshly ground pepper. There will be a good layer of pepper. More than you think there should be. When the skillet is hot take it out (using potholders!) and put it on a burner over high heat. Gently slide the the steak onto the skillet and let it cook for a minute, flip and cook the other side a minute as well. Then stick into the oven for two to three minutes turning halfway through if you remember though it's not essential. After the two minutes remove the steak to a plate and cover loosely with foil.
When I'm cooking a fancy meal this is often what I do. I make some potato gnocchi and cook them, you can just buy them ready made. After removing the steak from the pan I put the skillet back on medium low heat. I add a tablespoon or two of butter and just enough beef stock to cover the bottom of the skillet to about a 1/4 inch depth (Maybe a cup or a little less) and whisk up all the tasty bits from the bottom. I turn up the heat and let this reduce for four or five minutes and then turn down the heat again and crumple in a handful of Gorgonzola cheese. Then I whisk until the cheese has melted and once it has I add about a generous half a cup of a good dry white wine and a half a cup of cream, keep whisking until the sauce reaches desired consistency. Serve the steak and gnocchi with this sauce. Often for a veggie side I heat up some olive oil in a nonstick skillet and drop in some crushed garlic, cook just until soft (do not let brown) and toss in some baby spinach (You'll need a lot, two generous handfills per person) and cook until just wilted and a bright green. Stirring constantly. Also a good basic salad with a basic balsamic vinaigrette and plenty of tomatoes would be a great start. And remember, don't cook with wine you wouldn't be willing to drink on it's own, you'll need a big glass while you're cooking!
I usually serve this with white wine, but I'm a fan of going against conventions.
Make him bring a very rich dark chocolate mousse or even just straight chocolate for dessert!
Cheers!

Some tips:
Get steak just to room temp before cooking.
Broil in the oven or cook on a grill - don't fry it in a pan.
Don't poke it with a fork or cut it while it's cooking - use tongs, so all the juices don't run out.
Doneness test: Med Rare when you press the steak with your finger will feel kind of like the middle of your palm - you can push in a little but not as soft as the mushy base of your thumb and not as hard as the base of your pinkie.
Let it sit undisturbed for 2 min after cooking/before eating.
Seasoning: Good steak doesn't need much more than salt or pepper.. but that Montreal Steak seasoning is pretty awesome!
Sides: You can get real mashed potatoes already made at the store when you pick up the steaks - Country Crock or Simply Potatoes - they're good, & easy in the microwave. You can also get veggies that cook right in their own bag in the microwave.
Don't forget presentation... nice plates, serving dishes, and pretty napkins of you have them... maybe a candle or some flowers from the groc. store (make sure they're not too tall - you want him to be able to look lovingly into your eyes while you dine, lol!) Hope he appreciates it! Good luck!

Don't worry. You have picked one of the tastiest and easiest meats to make. Get a good steak, like a fliet mignon or a ribeye. Season with salt and pepper. Then heat up some butter and olive oil in a pan. Place steaks in pan and cook until medium rare An easy way to tell if it's medium rare is if you touch the tip of your middle finger to the tip of your thumb and feel the big part of your thumb. When the steak feels the same way, it's about medium rare. Take out of pan and keep warm. Make a compound butter (butter with added flavorings) by softening a stick of butter. Then put in a bowl. Add chopped fresh herbs (thyme, basil, sage, etc.) or bleu cheese. Be creative! Then roll up into a cylindrical shape and chill until ready to use. When the steak is done, cut a pat of your compound butter and place it on top of the steak to melt. For sides, an easy mashed potato is just place potatoes (peeled or unpeeled) in cold salted water, bring to boil, let boil for 20 minutes, drain, put potatoes back in pot, add butter, mash up with potato masher. Add hot cream or milk to thin out. Add some sour cream, Parmesan cheese and pepper. For a vegetable, you can make some asparagus by placing some asparagus on a microwave safe plate, sprinkle with water and cook for 2 minutes. Season to taste with salt, pepper and lemon juice. I hope this helps you out. Happy cooking and good luck! I know your bf will love it.

Steak fingers for rare steak lovers

If you love rare or medium rare steak, this recipe is for you.

7 min 5 min prep

1 lb of good quality round steaks or sirloin steaks (calculate about 1/3 to 1/4 pound per person)
1 cup flour (or more)
1/2 cup soy sauce (or more, Lite is good, I find regular soy sauce to be too salty)
fresh coarse ground black pepper, to taste

Cut up Round Steak or Sirloin Steak into finger-sized pieces (about 1" or so in diameter, but no thinner or the meat will cook too fast), about 1/3 to 1/4 pound per person.
(To make slicing easier, place the meat in the freezer for about 30 minutes before slicing.).
Dip the Steak Fingers into the Soy Sauce, then dredge in the flour. (You can use a plastic bag for the flour-dipping part.).
Repeat Step 3, then place all the meat on a plate or platter. (At this point, if I want the pieces to turn out especially rare, I put them back into the freezer for a bit before cooking.).
When you get a plateful of breaded Steak Fingers prepared, quickly place them into a frying pan of heated vegetable oil one at a time. They should really sizzle as soon as you drop them into the oil. As soon as the entire plateful of meat is in the oil, begin turning the pieces. As soon as you have finished turning all the pieces, begin taking them out to drain on a paper towel covered plate. Sprinkle with cracked pepper and serve over hot rice with a salad.
NOTE: The entire frying process should only take a few minutes. DO NOT LEAVE THE STOVE OR THEY WILL OVERCOOK. The meat may turn out tough if it is cooked well done.
P.S. These steak fingers heat well the next day for lunch, just so long as they are not cooked well done to begin with.

First of all to cook a good steak, heat your skillet hot, no grease, season your steak, on medium to high heat cook your steak, you can tell the if its rare, medium, medium well, etc. by touching the steak. The more to the touch(indention), the rarer it is. Have a salad, corn, and mashed potatoes, and gravy, with some biscuits or rolls.
