Funny you should ask this question because I just asked my dad about how crow tastes. He said you can eat them but they don't taste good.
That's probably why there's no hunting seasons for crow.
But I wouldn't try it. A few months ago I read in my local newspaper that 2 crows found dead in a town 20 miles from us died of bird flu.

Back home there is a season on crow, but mostly for population control. I even remember one year they had a bounty on crow...
But, I asked my great grandmother once if she had ever eaten crow, and she said, yes, crow and blackbird, but with both, the old birds taste bad...you need young birds.
Also, concerning the fact that they eat carrion...the indians use to find vultures that had stuffed themselves to the point they could not fly, and catch them and eat them...so...

Some people say that if you eat a crow, you are eating one's soul. Obviously, an old wives tail, but something to think about!

Safe as is with any wild game. ...If however you are speaking of "eating crow" as in admission of error or guilt- it is always safe and appropriate to set things right. If on the other hand- crow, blackbird, & pigeons are generaly edible but not commonly eaten.

I wouldn't want to because it is a carrion eater. IE would you eat a vulture? Crows tend to eat dead carcasses they find ie road kill diseased animals or just plain garbage. They don't seem too particular either. I would suggest something else for you Thanksgiving dinner. :)

Most places that I know of, it's illegal to kill crows as they are scavengers and not a game animal.
