You mean, in history? Probably the Native Indians. Ever been to California's Grinding Rock State Park? According to their info, the Indians, who once lived in that woods, tried everything to see if it was eatable or not- everything there, including the plants that you see, on the tour. Yes, lots of guts.

I wouldn't call the basic need to satisfy hunger as having the guts try eating whatever is available. Nor do I think the issue of a food source being safe to eat was considered until after harmful results had occurred to cause such a concern being necessary.
Newborn infants instinctively put whatever they can grasp directly into their mouths whether it is edible or not. Why do you think they do that and how much "guts" do you think they require to taste anything they can?
It is obvious you are well provided for with a lifestyle so comfortable you don't comprehend the value of how fortunate you are. You are privileged to have the resources of advantage available for you to enjoy however you please. Have the guts to respect what you have been given by appreciation and understanding for those less fortunate than yourself.

Although the Bible doesn't say, many think Eve was the first to eat an apple.
Tomatos were thought to be poison at one time.
But what I wonder is who looked at a lobster and said "I'm gonna EAT that sucker !".

I dunno if it was guts. I reckon that it had something to do with survival. Think about it: If you feel like you're starving to death and you see something that looks remotely edible or if another animal is eating it, you'd give it a shot, yeah?

Necessity must have been the 'father' of this initial consumption, just as it is rated as the 'mother of inventions' !
...Our early ancestors discovered most of what all they did - either by sheer necessity, or pure accident !
