You need whats called a psychometric chart. The chart shows the ratio of water vapor to air at various conditions. If your refrigeration system coil is below the dew point of the incoming air then water will condense from the air.

These charts also usually tell you how many pounds of water vapor are contained per cubic foot of air. So once you know the pounds of water vapor condensed you can calculate the latent heat load, and add it to the sensible heat load for the total.
