I wanted to get a ceramic knife, but he already has one. This is not for a professional chef, but for someone who loves to cook and appreciates well-made things. Thanks!

Don't know what they already have or what type of cooking they do but some items I'd love to add to my kitchen are:
marble slab & rolling pin
More quality knives (these can get expensive)
A large set of the small clear glass bowls like they use on cooking shows.
Someone to do the clean-up after I spend all day cooking a feast :)
A nice assortment of silicon bakeware

Well if you like to save money and make something that is sort of a keep sake you can go to a gift shop by a journal that has something to do with food. Take as many recipes as you can that you both like maybe even get a little romantic and if there are restaurants you both went together to where you ate something really great get the recipe for those dishes and glue them nicely inside the journal. Buy him a set of cooking utensils that he may need or has wanted. and give those to him.

Have a Chef's apron made with his name embroider on it. Have it made with reinforced pocket .Also a small pocket on the top for a food thermometer.For 100 dollars you should also be able to get matching oven Mitts made. Other than that a stand to hold his cook book while cooking. Or custom printed recipe cards.

Knives come in different sizes. He may already have a ceramic knife but you can get him another in a different size, then you can have it engraved with his initials. Got a really nice henkels knife and had it engraved for a friend after completion of culinary school.

find a gourmet chef (restaurant, cooking school, yellow pages etc) in your local area and pay them for an evening of cooking lessons and tips for your friend

What about a pestle and mortar. I've seen them made from marble and always thought it would be a great thing to have and not too expensive.
