I highly reccomend the Case For Christ, by Lee Stroebel. You don't have to read the whole book just the last few chapters. He talks to professors that major in this area. There is lots of evidence. Too much to list.
I will say that part of why I beleive in the bodily ressurection is because they never found the body. The Pharisees and the Romans would have been more than happy to oblige the believers in Jesus to quite them, but they never produced the body.
The diciples were running scared. When Jesus was arrested and crucified, they all ran and hid. They were afraid, but after the ressurection something happened them to empower them to stand for Christ and take the message of Jesus out to the world. All but one of the apostles would later face martyrdom. If Jesus didn't ressurect and appear to them, then those like Peter who denied Him while He was still alive would have still denied Him after.
The other thing is that He also appeared to 500. Not to metion to Paul after He had ascended. Paul had absolutely nothing to gain but eternal life and the pleasure of serving Jesus. He had a complete transformation from killing Christians to becoming one, which eventually would lead to him being imprisoned several times, beaten, and eventually killed. Nothing in scripture says that Paul was remorseful about what he did until He saw Jesus.
Read Case though. So much more info

1 Corinthians 15:3 For I delivered unto you first of all that which I also received, how that Christ died for our sins according to the scriptures; 4 And that he was buried, and that he rose again the third day according to the scriptures: 5 And that he was seen of Cephas, then of the twelve: 6 After that, he was seen of above five hundred brethren at once; of whom the greater part remain unto this present, but some are fallen asleep. 7 After that, he was seen of James; then of all the apostles. 8 And last of all he was seen of me also, as of one born out of due time. 9 For I am the least of the apostles, that am not meet to be called an apostle, because I persecuted the church of God.

Grace unto you, and peace,
from God our Father and the Lord Jesus Christ.
So far only the head of the body of Christ is risen,
and notably risen "far above the heavens" on high,
to God in heaven: higher than the heavens on high.
For Christ is only "author" of eternal salvation: Heb 5.
If my head authors go to store, it doesn't get me there.
I only get to the store when my body takes me there.
Christ: the end of the law, is the Saviour of the world.
But his head: God our Saviour, will have two things:
All men saved "AND" all men aware what from: law.
http://www.godshew.org/RevelatorySermons6.htm
Our Father, deliver us from evil: Mt 6:13
We are delivered from the law: Rom 7:6
What remains is global awareness of it.
Till then, the body of Christ is grounded.
For there is no law at all in Grace-land.

I'd suggest you do a paper on the will of God:

for receiving the promise comes after doing God's will.
The Grace(God) of our Lord JC with you all. Amen.

Look in all four gospels, also in the letters. It's not like it's only mentioned once in a while. That is the whole gospel, that Jesus rose from the dead and was seen by the 12 plus many others.

24 But Thomas, one of the twelve, called Didymus, was not with them when Jesus came.
25 The other disciples therefore said unto him, We have seen the LORD. But he said unto them, Except I shall see in his hands the print of the nails, and put my finger into the print of the nails, and thrust my hand into his side, I will not believe.
26 And after eight days again his disciples were within, and Thomas with them: then came Jesus, the doors being shut, and stood in the midst, and said, Peace be unto you.
27 Then saith he to Thomas, Reach hither thy finger, and behold my hands; and reach hither thy hand, and thrust it into my side: and be not faithless, but believing.
28 And Thomas answered and said unto him, My LORD and my God.
29 Jesus saith unto him, Thomas, because thou hast seen me, thou hast believed: blessed are they that have not seen, and yet have believed.
30 And many other signs truly did Jesus in the presence of his disciples, which are not written in this book:
31 But these are written, that ye might believe that Jesus is the Christ, the Son of God; and that believing ye might have life through his name.

The best Christian writer that I personally like for this subject is Josh McDowell.
Here is an article that he wrote. Hope this helps you with your research.

Jesus is a spirit person an angel of god and doesn't have a flesh and blood body. But he can make one, that looks anyway he chooses. For doubting Thomas he made holes in his hands.

You would need to do a text search in the New Testament to find them all. But try 1 Cor. 15:12-58.
------------------------------------------------------------------------
While they were still talking about this, Jesus himself stood among them and said to them, "Peace be with you."
They were startled and frightened, thinking they saw a ghost. He said to them, "Why are you troubled, and why do doubts rise in your minds? Look at my hands and my feet. It is I myself! Touch me and see; a ghost does not have flesh and bones, as you see I have."
When he had said this, he showed them his hands and feet. And while they still did not believe it because of joy and amazement, he asked them, "Do you have anything here to eat?" They gave him a piece of broiled fish, and he took it and ate it in their presence.
