Let's see:
1) Forgave the thief - told him he would be in paradise
2) Forgave those crucifying Him
3) Told John to take care of Mary
4) Told the Roman soldier that He was thirsty
5) Gave His spirit up to God
6) Cried in sadness as God's presence was withdrawn

I believe it was two or three times. Check the later chapters in Matthew for exact refferencing.

I think it was seven times...
(1) "Father, forgive them; for they know not what they do," (2) "Verily I say unto thee, Today shalt thou be with me in paradise."
(3) "Woman, behold thy son!...Behold thy mother!"
(4) "Eli, Eli, lama sabachthani? that is to say, My God, my God, why hast thou forsaken me?"
(5) "I thirst."
(6) "It is finished."
(7) "Father, into thy hands I commend my spirit."
