Do you want a homeschool program (like Bob Jones HomeSat or Robinson Curriculum) or do you want traditional homeschooling (parent-led education)?
The first thing you need to do is read up on the HS laws in Texas. You can start at the HSLDA website and then check out THSC (the Texas org.) These will explain what you need to do to begin homeschooloing in TX.
If you are choosing your own curriculum, you need to consider both your philosophy/method and your child(ren)'s learning style (auditory, visual, or kinesthetic). Knowing these will help you pare down the multitude of available curriculum to what will work for your family. If you are choosing your own curriculum, here's where you actually choose the curriculum. Check out Rainbow Resource for LOTS of choices and the best prices (usually). If you are going with a packaged program (which can be anything from a curriculum-in-a-box, like A Beka or Bob Jones, to online schools, like Robinson or American), you'll need to decide which program will be the best fit with your family.
Make sure you get involved with a local support group or co-op, as the resources they provide are immeasurably valuable - everything for curriculum exchanges/sales, to park days, to field trips, to general support.

Texas Tech has an excellent and accredited correspondence program leading to a recognized High School diploma. It isn't cheap, but it is a proper education for the home schooled child. The Tech website should be able to help.

well, can't add anything to that except to emphasize the value of checking the THSC website (Texas Home School Coalition)
They are invaluable to the home educators in Texas (I'm one, too)
They even have sample letters of intent you can use to send to your child's school, and they explain the process in detail to make sure your rights remain intact through the process of removing your child from the public system.

A very simple one is the Beka Video Home School out of Pensacola, FL. They send you textbooks and DVD's with real classrooms on them. It is religious based.
