It depends what you're using it for. If it's just for sauteeing onions, say, you could use butter or PAM spray. If you're trying to substitute fat in a quickbread recipe, you can use applesauce (as another reader suggested) for about 1/2 to 3/4 of the oil. If the fat doesn't have to be liquid, you can also substitute shortening.

Melted butter and margarine are not THAT good. I learned while dieting, that E.V.O.O extra virgin olive oil is good for low fat cooking methods. If you use the margarine that is just 37% vegetable oil. If you use butter, your eating fat. So I would go with evoo, or Pam butter spray--o carbs and o calories, and doesnt let stuff stick. :)

Good in what way ? Oil & butter have the same fat ratio although butter is saturated, and margarines have bad additives.
Butter tastes better but burns at lower heats than oil.
What are you trying to do, look for ?
If you just want moisture, sometimes fruit purees work OK.

Check this link at ehow for possible substitutes. Since oil can be substituted for butter, it should be able to go vice versa. Just check the quantities, since it is NOT always a 1-to-1 conversion.

Olive oil....it better for your heart. Heart patients use it. I'm not
sure what the best tasting kind is, but it's the healthiest. I'm sure
if you were to look at the different ones, you may find one or two
to suit your various cooking needs.
