I like the last best; the second is fine; you can change the first to "I hope the conference IS a COMPLETE success".
Oh and: Success ends with two s's, and sucessful is like that.

The last two are both grammatical and appropriate. The first sentence is a little awkward.
Remember to capitalize the first word - I wish you... I hope...

The last could be used. It 's a lot like wishing one a happy birthday, or good health.
The first two should be,
"I hope 'that' the conference................."
