Ginsing is suffosed to be very profitable but it takes about 5 years to get marketable roots but it can go for 25 to 50 a pound. For the short term, I have read that selling strawberry plants to large farms and nurseries is fairly profitable. I have also heard that selling organic produce is making money and that selling herbs organically grown to grocery chains and restaurants is fairly profitable. Mushroom farming is really getting up there, particularly dried mushrooms such as shitake and morels.

Generally, animal products are more profitable than vegetables. Meat chickens, laying hens, Thanksgiving turkeys, geese and sheep are all interesting markets and I think can be much more profitable than simply gardening.

Joel Salatin wrote a book called "You Can Farm." In it he explains how he makes enough money producing organic chickens, eggs and beef to be a fill time farmer. It's a very interesting book if you have the time to read it.

That really depends on your market. For instance, if you're good, you can make a great deal of money in the ostrich market. The meat is expensive and they are very cheap and easy to raise. However, most people in America would not buy the meat.

If you're looking to something a little less exotic, you can try raising geese and chickens and ducks. They are also very simple to raise, though a lot more disease-prone than ostriches.

Just find something you would like to raise and then do research on that. Narrow your criteria first. It'll be a lot easier.
