I make Alfredo weekly at my work place and have never used sour cream, always heavy cream and 1/2 1/2. I always use a little white wine and cream cheese to tweak it, making it my own recipe besides the standard cheeses. Alfredo is one of my favorite foods. It makes the best sauce for a white pizza. If the cream is whipped it won't work well. Seperation will occur. If you have heavy cream left over use that. Sour cream never goes into an Alfredo. The alfredo is made with heavy cream or half cream/ half milk. To that add your parmesean, parsley whatever. Sour cream goes into Stroganoff not Alfredo. If your alfredo tastes bitter something is wrong with it. Also make sure you use REAL Butter.

No. There is no whipped cream in Alfredo sauce. Just cook equal parts of flour and butter to make what's called a roux. Then after it's cooked, add hot milk or cream, add a half onion with two cloves stuck on the outside in the saucepan, bring to a boil and lower the heat to a simmer until it's the consistency you want. Take the onion out, season to taste with salt, white pepper and a pinch of nutmeg. Add freshly cooked fettucine to the sauce and stir until thoroughly combined. Serve with cooked seafood on top.

Use whipped cream only if you want your alfredo sauce to be sweet. I wouldn't. A trip to the grocery store for more sour cream is what I would recommend.

If there's only a _tiny_ amount of sugar in the cream, go for it. So many convenience foods have sugar in them that it might even end up tasting a bit familiar, like it was made by Kraft or something.

Sure, you could, but I wouldn't recommend it. That won't taste right. You'll have the cream, I suppose, but not the sour part. :-) Literally though, it's a different type of dairy product and it won't work very well.
For the easiest solution for a simple meal, buy a packaged meal that is alfredo. Or a packet of sauce mix.

It sounds like you're trying to counteract the sour cream for the sweet whipped cream - balance it out, so to speak. Though I can understand your thinking, I'm not sure how this is going to taste.
For future reference, you want to use whipping cream - not whipped cream (though you can whip whipping cream!).

SIMPLE SEAFOOD ALFREDO
Low heat:
1/2 c. butter
2/3 c. heavy cream
Add:
1 c. Parmesan cheese
1/2 c. Ricotta cheese
1/4 tsp. salt
Dash pepper
Heat until smooth.
Add cooked shrimp, scallops or crabmeat. Warm for 1 minute. Serve over linguini.

ALFREDO IS NOT MADE WITH SOUR CREAM IT IS MADE WITH HALF AND HALF OR CREAM. MILK ALSO WORKS WITH A BIT OF CORN STARCH TO THICKEN. ADD ABOUT ONE TEASPOON OF LEMON JUICE TO MIXTURE SALT PEPPER TO TASTE. NICE TO ADD LIL GARLIC POWDER, PARSLEY FRESH OR DRY AND SOME MILD PEPPER FLAKES. AFTER YOU AKE YOUR ALFREDO WHICH IS A LIGHT GRAVY MIX IN YOUR FISH GENTLY STIR, COOK YOUR PASTA AND POUR OVER YOUR ALFREDO. SERVE WITH A DARK GREEN SALAD LIKE SPINACH WITH LEMON AND GARLIC SAUCE, HAVE SOME CRUNCHIE ITALIAN BREAD. REALLY GOOD .
