We are having a Chocolate Festival in a couple of weeks. One of our offerings is build your own Hot Fudge Sundaes. I am going to make a homemade Hot Fudge recipe, but I am wondering if it will "keep" in a crockpot on low for several hours. I don't want it to crash or separate or get too thick. Help!

I would advise using the techniques as in the recipe below.......greasing the crock pot walls with butter or pam spray, stirring, etc.

Chocolate Dessert Fondue
1 1/2 ts Butter or margarine
8 pk Chocolate candy bars with Almonds (one oz. size)
1 1/2 c Marshmallows, miniature
3 tb Milk
1/2 c Whipping cream
Rub crock wall with butter. Place candy bars, milk, marshmallows in crockpot. Cover and cook, stirring every 30 minutes, until melted and smooth. Gradually add whipping cream.
Cover and keep warm for serving up to 2 to 6 hours later. Serve with bite size pieces of angel food cake, yellow cake, bananas, strawberries, grapes, mandarin oranges.

Here's a couple ideas (without knowing what your recipe is for the sauce):
1. Use a little corn syrup in the recipe- this will reduce "recrystalization" of any sugar in the event of loss of moisture.
2. A double boiler might be a more gentle way to keep the sauce warm.
3. Add some pre-warmed milk or cream if the sauce starts to seize up.
4. Do a practice run before the event to make sure it's going to work!

Grab your little Ice Chest, a quart of Milk, a spoon and ever so often if it tightens up on you, little milk,stir stir, Presto, you be just fine

Ya... You are going to need alittle mike to it... but all in all it will be fine... you will have a great time...
