you use the guts, yes, but make sure all the seeds are out of it. you can mush it so that it mixes into your batter easily. you can find recipes on kraftfoods.com
Yes, you can still carve the pumpkin. If you've taken all the guts out, that's all your using for the baking. You should just have the hollow pumpkin left and it should be all ready for carving. Good luck!

You should actually use the flesh of the pumpkin. I normally keep my eating and decorative pumpkins separate.
The bigger pumpkins ( up to 30 lbs) are better for pie fillings and the smaller ones are better roasted. I scoop out the guts and save the seeds for eating too. ( After roasting and with a little salt)
I cut up the shell into chunks and cut off the skin. Then shred the flesh into a pulp, add water and simmer until soft. Continue cooking slowly to reduce the water content. Add butter, brown sugar, cinnamon and clove and their you have pumpkin fillings which you can use for all sorts of bread or muffins.

When you cook pumpkin you use the flesh...the actual pumpkin underneath the thin outside skin...it's much easier to buy a can of pumpkin because then you don't have to clean it and mash it. It tastes just as good...If you use the pumpkin for cooking there would be no shell left to carve so no, once you butcher the poor thing that is the end of it.

You have to use a pie pumpkin (not the big ones you would normally use as jack-o-lanterns).
You would use the "guts", but make sure to get enough pumpkins for the job. Definitely dont use the rind, it would be very very bitter!
After you're done, you COULD use the pie pumpkin for small jack-o-lanterns, but they will bruise and mold alot faster than regular pumpkins, due to their sweetness.
All in all, its fun to try and make pumpkin pie or cookies "from scratch", but you'll most likely find that its SOOO much easier to buy the canned kind!

I got to big pumpkins and I would like to know if I can use them and them I thought I don't want to they are sitting open and expose ,but I did roast the seeds and ate them ,some I saved to plant next spring

Roast it in the oven like you roast squash after you seeded it and cut it in half, when tender to the touch let it cool and scrape with a lrg. spoon all the flesh from the inside. There won't be anything left to carve so get an extra for that...BOO!

Scoop the guts out, then roast the rind. I scoop the rind away from the skin and puree it.
