Because it's served in "continental Europe." It's just things they commonly eat in Europe. Actually that phrase (continental) is applied in other places as well, to indicate the way they do things "over there." Continental knitting is done from the left and is actually less hard on your hands.

light breakfast consisting usually of coffee or tea and a roll, pastry, or other baked good.

typical Continental Breakfast consists of a breadstuff (such as toast, croissants, pastries) and coffee, tea, or other liquid. The Continental Breakfast is the "antithesis of the hearty English Breakfast, in which one sits down to cereal, bacon, eggs, sausage, tomatoes, toast, marmalade, and tea."

The Continental Breakfast concept isn't limited to Europe, as evidenced by the numerous American hotel chains that offer this service. Some countries, especially those in Scandinavia, do add fruit and cheese to the bread menu, and even a boiled egg or salami.¹

IN England, Europe is referred to as "the continent." The English traditional breakfast is hearty, but in France and Italy they like coffee and a pastry.

I think it comes from the Continental Flight where you have one Danish Roll and cup of coffee or Juice with a slice of rubber toast.

My idea of a Continental Breakfast is Waffles & Syrup, two eggs sunny side up, four pieces of toast buttered, small bowl of Grits, two slices of Bacon and a sweet roll.
Large glass of Milk and a cigarette.

Typically the breads, pastries, juices and coffee is what you'd usually get for breakfast if you stayed at a hostel, etc. overseas.

it is called that cause in europe they eat lighter there and in hotels they serve that.(also cheaper and easier there too) they adapted it over here because it is cheap and easy to serve. Now if you want more they can charge you more but it sounds different and better than hearing hey you get served the cheap breaky
