1/2 pound lean beef stew meat
2 tart baking apples, peeled, cored and chopped
1 cup raisins
1 cup dark brown sugar
1/4 cup vinegar
2 T. molasses
1 cup currants
1/4 cup apple cider (apple juice okay also)
1/2 tsp ground cloves
1/2 tsp nutmeg
1/2 tsp allspice
3/4 tsp cinnamon
2 T. rum
pie dough for a double crust deep dish 9" pie
Preparation -
Place beef in a pot, add water to cover and bring to a boil. Cover, and simmer for about one hour or until tender. Cool, then run the cooked beef through a meat grinder or a food processor to grind coarsely. Place the meat and the remaining ingredients in a large pot. Cook over medium heat almost to a boil, stirring constantly. Reduce heat to simmer, cover and cook for 1 hour, stirring occasionally. Remove from heat and let cool. Prepare pastry for a double crust for 9" pie. Place meat mixture in the pie shell. Scatter rum over mixture. Place the remaining crust on top and flute edges to seal to bottom crust. Make a few slits in the top crust to allow steam to escape while baking. Bake for 1 hour at 375°. Serve warm, garnished with whipped cream if desired

HOME MADE MINCE MEAT FOR PIE
1 peck green tomatoes (32 c.)
1 peck apples (32 c.)
5 lbs. brown sugar
1 lb. white sugar
1 lb. currants
1 lb. raisins
2 tbsp. cinnamon
1 tbsp. cloves
1 tbsp. salt
1 tsp. ginger
1 c. suet, ground
1 1/2 c. vinegar
Cut up green tomatoes and grind in coarse grinder. Put in cold water with the salt, let come to boil, drain, do this 3 times. Peel and core apples; coarse grind. Mix tomatoes and apples with rest of ingredients and boil for 1 hour. Watch carefully as to not burn. Can in jars and seal. This is very rich. When making a pie, use about half mince meat and equal amounts of raw apples. This mince meat can be frozen rather than canned.
PUMPKIN MINCE MEAT PARTY PIE
Pastry for one pie
2 c. mince meat
3 1/4 c. (30 oz.) can pumpkin pie mix
2 slightly beaten eggs
2/3 c. undiluted evaporated milk
Line bottom and 1 1/4 inches up sides of 13 x 9 x 2-inch baking dish with pastry. Spread mince meat over bottom of crust. Combine remaining ingredients. Pour over mince meat. Bake in 350 degree oven for 50 to 60 minutes or until knife inserted near center comes out clean.
PASTRY:
Stir 1/4 teaspoon salt into 1 1/2 cups flour. Cut in 1/2 cup shortening. Stir in 1/4 cup water. Roll on floured surface to 15 x 11 inch rectangle.
Makes one 13 x 9 inch pie.

1 pound ground meat
1 pound ground pork meat
1 bunch green onions, chopped
1 pod garlic, minced
1 bell pepper, chopped
1 medium onion, chopped
Salt, black pepper and red pepper to taste
1 tablespoon flour
1 teaspoon shortening
Melt shortening in heavy pot. Add meat. Cook until pink is gone. Add vegetables and season to taste. (Season well, as meat will lose seasoning during frying.) When meat is completely done and vegetables glazed, remove from heat and drain excess liquid. Stir in 1 tablespoon flour.
Sift dry ingredients together. Cut in shortening. Beat egg and add to milk. Work gradually into dry ingredients until proper consistency to roll. Break into small pieces and roll very thin,. Cut into rounds using a saucer as a guide.
Meat Pie Crust
1 quart plain flour
2 teaspoons salt
1 teaspoon baking powder
2 eggs
1/2 cup shortening + 1 T
1 cup milk
To assemble:
Place a large tablespoon of prepared meat along edge and halfway in the center of round dough. Fold the other half over, making edges meet and seal with water. form edges with fork. Drop in deep fat and cook until golden brown. Drain and serve hot. Makes approximately 18.

"Mince Cream Cheese Pie"
9" pie shell
1 (28 oz.) jar prepared mincemeat (3 cups)
2 (3 oz.) pkgs. cream cheese; softened
1/3 cup sugar
1 egg
Heat oven to 425*. Spread mincemeat in pastry-line pie pan. Cover edge with 2-3" strip of aluminum foil to prevent excessive browning; bake 20 minutes.
In small mixer bowl, beat cream cheese, sugar and egg until smooth. Remove pie from oven; remove foil. Spread cream cheese mixture over mincemeat. Reduce oven temperature to 350*. Bake 20-25 minutes longer or until knife inserted in center of topping comes out clean.
"Mincemeat-Apple Pie"
9" pie shell
1/4 cup all-purpose flour
1/3 cup sugar
1/8 tsp. salt
1 tbsp. butter
1/4 cup water
2 tbsp. red cinnamon candies
1 (18 oz.) jar prepared mincemeat (2 cups)
3 tart apples
Heat oven to 425*. Sprinkle 2 tbsp. of the flour in pastry-lined pie pan. Mix remaining flour, the sugar, salt and butter until crumbly. Heat water and cinnamon candies, stirring until candies are dissolved; set aside. Spread mincemeat on pastry.
Pare apples and cut into quarters. Cut quarters into wedges, 1/2" thick at outer side. Cover mincemeat with 2 circles of overlapping apple wedges; sprinkle with sugar mixture. Spoon cinnamon syrup over top, moistening as much of sugar mixture as possible.
Cover edge of pastry with 2-3" strip of aluminum foil to prevent excessive browning; remove foil last 15 minutes of baking. Bake 40-50 minutes.
