MEATLOAF RECIPE
INGREDIENTS
* 2 pounds lean ground beef
* 1 (10.75 ounce) can condensed tomato soup
* 1 onion, finely diced
* 1 cup rolled oats
* 2 eggs, beaten
* 1 tablespoon steak sauce
* 1/2 cup ketchup
* 3 tablespoons prepared mustard
DIRECTIONS
1. In a large bowl, combine ground meat, soup, chopped onion, rolled oats, eggs, steak sauce, ketchup and mustard. Mix well.
2. Shape into a loaf, and pat Into a loaf pan.
3. Bake in a preheated 350 degrees F (175 degrees C) oven for 1 hour or until done.
SERVING SUGGESTIONS
Mushroom Gravy - Stir together half a can of condensed cream of mushroom soup, 3/4 cup water,1 chopped onion, salt and pepper.
(Plain, Garlic or Butter) Mashed Potatoes. - Experiment with additions, such as fresh herbs, crumbled bacon, cheese or caramelized onions.
Vegetables (Buttered Carrots/Sweetcorn/Green Beans) - Simply melt some butter over whole baby carrots before serving. Season with coarse salt and freshly ground pepper.

ALL-IN-ONE MEAT LOAF DINNER
3 tablespoons sunflower oil
1kg cabbage, coarsely shredded
1 medium sized onion, peeled and thinly sliced
1 tine tomatoes, peeled and chopped with their juices
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon black pepper
1 2/3 cups beef stock
3/4 cup white rice
2 large eggs
500g lean beef mince
4 tablespoons soft bread crumbs
4 spring onions, uncluding tops, thinly sliced
1/2 cup grated Gruyere or Emmenthal cheese
1/4 teaspoon dried thyme
2 tablespoons finely chopped parsley
Preheat oven to 180 degrees celsius
Spread the oil in a large baking dish or a roasting pan.
Add the cabbage, onion, tomatoes, sugar and half the salt and pepper adn mix well.
Cover with foil and bake for 45 minutes, stirring ocasionaly.
Bring the stock to a simmer in a medium sized saucepan over moderate heat.
Stir in the rice, reduce the heat to low, cover and simmer until all the water is absorbed.
In a large bowl, beat the eggs lightly, then add the minced beef, 2 tablespoons of the bread crumbs, 1/4 cup of the spring onions, and the remaining salt and pepper and mix well.
Cover a sheet of waxpaper with the remaining 2 tablespoons of bread crumbs.
Pat the beef mixture firmly on top of the crumbs.
Mix the cheese, thyme and remaining spring onion into the rice and spread on top of the beef.
Beginning with the long edge, roll up the beef like a Swiss-roll, pulling off the wax paper as you go.
Pinch the meat together at both ends, enclosing the rice, then pinch the seam to seal.
Remove the baking dish from the oven and push the cabbage mixture to the sides with a wooden spoon.
Place the meatloaf, seam side down in the centre of the pan.
Bake uncovered for 40 minutes.
Sprinkle with parsley before you serve

I use a meatloaf mixture of ground beef, pork & veal. About 2 pounds worth. In a large mixing bowl, combine meat, 1 egg, 1 cup seasoned bread crumbs, 1 package Lipton Onion Soup Mix (dry), 2 tbl Worchestishire sauce, 3 cloves garlic (pressed or minced), fresh ground pepper to taste, 1 dash cayene pepper, 3-4 dashes of Frank's Hot Sauce. Combine mixture with hands until everything is well blended.
Place in loaf pan. Bake at 375 degrees until done. About 60-90 minutes. During last 15 minutes, spread 1 small can of Tomato Paste on the top of the meatloaf!

Easy no frills meatloaf:
1 1/2 lb.Ground beef
1 1/2 lb.Ground pork
1 package Onion soup mix (dry)
1 can Tomato sauce
1/2 cup Green pepper
Garlic powder, seasoned salt, black pepper
Mix all the ingredients well in a bowl. Shape the meat and put in a baking dish and bake at 350 degrees until done.
You can serve this meatloaf with brown gravy. You can use a dry gravy mix, or you can buy beef gravy in a jar. If you like mushroom gravy, that's fine too. Meatloaf goes well with mashed potatoes and green beans or corn.

This is the way I make it. 1 pound extra lean ground beef 1 pound ground pork some bread crumbs (as much as you want)* 1-2 eggs a little milk 1 packet meat loaf seasoning mix (optional but secret ingredient - nutmeg) *I make my own bread crumbs from whatever bread is in the fridge and gone hard. I use a cheese grater or just crumble it up. Mix by hand. Get in there and mix and mush it all together really well. Place in a loaf pan. Bake at 350 degrees for 1 hour. This also makes great meatballs. If you roll the meatballs, place them in a 9x13 baking pan. I serve this with any number of things. Meatloaf with mashed potatoes and a sauce or gravy and vegetable or salad of your choice. Meatballs with sweet&sour sauce, barbecue sauce, white sauce, whatever you prefer.

Cajun Style Meatloaf
INGREDIENTS
2 bay leaves
1 teaspoon salt
1 teaspoon ground cayenne pepper
1 teaspoon ground black pepper
1/2 teaspoon ground white pepper
1/2 teaspoon ground cumin
1/2 teaspoon ground nutmeg
4 tablespoons butter
3/4 cup chopped onion
1/2 cup chopped green bell pepper
1/4 cup chopped green onions
4 cloves garlic, minced
1 tablespoon hot pepper sauce
1 tablespoon Worcestershire sauce
1/2 cup evaporated milk
1/2 cup ketchup
1 1/2 pounds ground beef
1/2 pound andouille sausage, casings removed
2 eggs, beaten
1 cup dried bread crumbs
DIRECTIONS
In a small bowl, combine the bay leaves, salt, cayenne pepper, ground black pepper, ground white pepper, cumin, and nutmeg; set aside.
Melt the butter or margarine in a saucepan over medium heat. Add the onion, bell pepper, green onions, garlic, hot pepper sauce, Worcestershire sauce, and reserved seasoning mix. Saute until mixture starts sticking to the bottom of the pan, about 6 minutes. Stir in the milk and ketchup; continue cooking for 2 more minutes, stirring occasionally.
Remove vegetable mixture from heat, and allow to cool to room temperature. Place the beef and sausage in an ungreased 9x13 inch baking dish. Add the eggs, the vegetable mixture, and the bread crumbs. Remove the bay leaves. Mix well by hand, and form into a loaf about 1 1/2 inches high.
Bake uncovered at 350 degrees F (175 degrees C) for 25 minutes. Then raise heat to 400 degrees F (200 degrees C) and bake for another 35 minutes. Let stand for 5 minutes before serving.

3 slices bread, shredded

1 cube beef bouillon, crumbled
3 tablespoons lemon juice
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a small bowl, combine ketchup, brown sugar, 1 tablespoon lemon juice and dry mustard until smooth.
In a large bowl, combine ground beef, shredded bread, onion, egg, bouillon, 3 tablespoons lemon juice, and 1/3 cup of the ketchup mixture until well mixed. Form into a loaf and place in a 9x5 inch loaf pan.
Bake 1 hour. Pour off fat. Pour reserved ketchup mixture over loaf. Bake 10 minutes more.

My MEATLOG
Mix 1lb of ground beef/turkey, 2 Tbsp Worstichire sauce, 2 eggs, 1/4 milk, 1 Tbsp mustard(optional), 1 cup crushed crakers(or toasted bread or u can use corn flakes), 1/2 cup chopped onion, 1/2 chopped celery. Bake for 1 hour in a 375 degree oven.
TOPPING
Mix 1 cup of catsup, 1/2 cup brown sugar, and nutmeg to taste. pour on the top of ur meatloaf for the last 15 min of baking time.

8 slices of cheese (I use shredded...it's easier)
2 lbs ground beef
1 1/4 cups dry bread crumbs (we like Italian flavor)
3/4 cups BBQ sauce
2 eggs
1 envelope dry onion soup mix ( I use Lipton garlic and herb)
Preheat oven to 350* (325* for glass pan). Cut 6 slices of cheese into small pieces; combine with remaining ingredients. Mix well. In shallow baking pan, shape into loaf. Bake 1 hour. Remove from oven. Arrange remaining cheese slices on top. Return to oven for 5 minutes or until cheese begins to melt. Refrigerate leftovers. Makes 8 servings.
Original recipe calls for ketchup. I swapped it out for BBQ sauce (something different). My family will eat it no other way now. My husband likes mine better than his moms.
Serve it with creamed potatoes or scalloped potatoes. Mac and cheese is good with it, too. I always cook English peas or green beans with mine.

I usually add 1 egg and a package of lipton dry onion soup mix into the meat mix together and place in roasting pan to cook. Upon it being done, I usually place some cheese (either slices of shredded) on top and let melt. Side dishes I usually have withit is a vegetable and potatoes, if no potatoes, rice, noodles, anything, it's all good.
