Tuna Spook Sandwiches
A Supper Solution from Mary King
At Halloween, dinner is a low priority on my kids' minds, but forefront for me, since I want to make sure they have something healthy. I used to fuss and make a big dinner only to find my kids didn't have an interest, and I was a bit stressed. These sandwiches came to my rescue. They're a delight to the eye and easy to assemble, giving you time to assist your goblins into their evening attire.
Tip: These sandwiches also make a great after-school treat. Try varying the filling by using different Halloween cookie cutters. Add some cut up apples, carrots and celery to complete the meal.
Preparation Time: 10 minutes
Servings: 7 spook sandwiches
Special Tools: 1 ghost cookie cutter RECIPE INGREDIENTS:
1 (8 ounce) can solid white tuna fish, packed in water
3 tablespoons mayonnaise
1 tablespoon fresh lemon juice
1 celery stalk, finely diced
14 slices white sandwich bread
14 raisins
1. Drain water from tuna and place in small mixing bowl; break the tuna into small pieces with a fork. Mix in the mayonnaise, lemon juice, and celery.
2. Cut the bread slices with a cookie cutter into the shape of a ghost. Spread 7 slices with the tuna mixture and cover each with a second slice of bread. Use the raisins to make the eyes on each sandwich. Serve with celery and carrot sticks.
AND
ROASTED GHOSTS
Ingredients
4 cups chopped white potatoes
1/4 cup milk
1 crushed garlic clove
2 tablespoons cream cheese or grated cheddar cheese
1/2 tsp salt
1/8 tsp pepper
1 19-oz can black beans, drained
Directions
Place the potatoes in a large saucepan and cover with water. Bring to a boil, then reduce the heat to low. Cook for about 15 minutes, or until soft. Drain the water, then add the milk, garlic, cream cheese, salt and pepper. Mash with a potato masher or beat with an electric mixer until creamy and lump-free.
Scoop the potatoes into a pastry bag without a decorator's tip. Squeeze the ghosts onto a lightly buttered cookie sheet so they stand upright. To create ghastly eyes, press two even-sized black beans (or peas) into each ghost's head.
Just before serving, warm the ghosts in an oven preheated to 350 degrees for about 5 minutes. Serve on white plates and eat with forks or fingers. Makes about 24.
TESTERS' TIP: Be sure to make lots of mini ghosts--when we tested this recipe at the party, the kids wouldn't touch the big ones.

Monster Cookies
INGREDIENTS:
3 eggs
1 1/2 cups packed brown sugar
1 cup white sugar
1 teaspoon vanilla extract
1 teaspoon corn syrup
2 teaspoons baking soda1/2 cup butter
1 1/2 cups peanut butter
4 1/2 cups rolled oats
1 cup semisweet chocolate
chips
1 cup candy-coated milk
chocolate pieces
DIRECTIONS:
1.Preheat oven to 350 degrees F (175 degrees C).
2.In a very large bowl, beat the eggs.
3.Add the remaining ingredients in order, mixing well.
4.Use an ice cream scoop to put on ungreased cookie sheet. Bake for 12 to 15 minutes.

You can make "candy corn" pizza:
Take your pizza dough, spread a circle of white sauce in the center (4 inch diameter). Sprinkle the white sauce with mozzerella. Then spread a 3 inch ring of spaghetti sauce around the white sauce. Top with red colored chedder cheese. Sprinkle cheddar cheese around the edge of the pizza creating a 1 1/2 inch border around the edge. Bake til edge is browned and cheese is melted and bubbly.
Backbones:
Spread flour tortilla with herb spreadable cheese. layer with spinach, hard salami, and swiss cheese, Lay thin strips of roasted peppers along the center of tortilla. Tightly roll into a spiral. Slice off and discard ends. (Or eat them lol) Repeat with remaining tortillas. then cut the rolls into 1 1/2 inch slices and secure with toothpicks. 2 or 3 rolls can be stacked of balance to resemble "backbones"
You can also decorate cookies/cupcakes. Or even try making a meatloaf into the shape of a monster's foot with the ketchup/glaze on the ankle part.

My mom would always let me help make Rice Krispie treats, but use Cocoa Krispies instead. Then, we'd press them out into a pan and use Halloween cookie cutters to cute out shapes. For example, we'd use the bat shaped cookie cutters because the cocoa krispies make the treats look black. Or we'd add food coloring to regular Rice Krispie treats (orange, for example) and cut out pumpkin shapes. It's easy and fun! :) Good Luck!

I also have two kids although my daughter is only one me and my son love do do things together here a a couple of sites with great recipe ideas. the third one I have not made yet but dying to try. hope this helps.

HALLOWEEN CUPCAKES
Decorate tops with Gumdrop Cats. Heat oven to 350 degrees and line muffin cups with paper baking cups.
1 2/3 c. all-purpose flour
1 1/2 c. sugar
1/2 c. cocoa
1/2 c. shortening
1 c. hot water
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
2 eggs
Beat all ingredients at medium speed about 30 seconds until blended. Beat on high 3 minutes. Fill cups 2/3 full. Bake 20-25 minutes until wood pick comes out clean. Remove from pan and cool completely.
CREAMY ORANGE FROSTING:
2 1/2 c. powdered sugar
2 tbsp. shortening
1 tbsp. butter
1 tsp. fine grated orange peel
1/4 tsp. salt
3 tbsp. orange juice
1 tbsp. lemon juice
Red & yellow food color (1 or 2 drops)
Beat all ingredients except food color on medium speed until frosting is smooth and spreading consistency. Stir in 1 or 2 drops of red and yellow food coloring.
BLACK GUMDROP CATS:
Cut a large gumdrop crosswise into 3 pieces. Use small rounded top piece for head, large piece for body. Cut tail and ears from third piece
GOBLIN'S DELIGHT CUPCAKES
A Halloween Treat For All Ages
8 oz. pkg. cream cheese
1/3 c. sugar
1 egg
1/8 tsp. salt
2 drops each red and yellow food color
1 c. Hershey's chocolate chips
CUPCAKES:
1 1/2 c. unsifted all purpose flour
1 c. sugar
1/3 Hershey's cocoa
1 tsp. baking soda
1/2 tsp. salt
1/3 c. vegetable oil
1 c. water
1 tbsp. vinegar
1 tsp. vanilla
Filling: Combine cream cheese, sugar, eggs, salt, food color in small bowl. Beat until smooth. Add chocolate chips. Set aside. Cupcakes: Combine ingredients in order listed in large mixing bowl. Blend well on low speed. Fill 24 paper muffin cups 2/3 full with batter. Spoon about 1 tablespoon cheese filling onto each cupcake. Bake at 350 degrees for about 20 minutes or until toothpick inserted in cake portion comes out clean.
DIRT PIE
1 large bag oreo cookies
1 c. 10x sugar
1/2 stick softened butter
1 (8 oz.) pkg. softened cream cheese
2 boxes instant vanilla pudding
3 1/2 c. milk
1 (12 oz.) container cool whip
Chop Oreo cookies in food processor until cookies look like dirt.
Mix butter, cream cheese and sugar together until smooth.
Blend pudding, milk and Cool Whip together.
Combine pudding and cream cheese mixture together until lumps are smooth.
In 9 X 13 pan, layer cookie mixture then pudding mixture, leaving enough cookie mixture for the top. Decorate with gummy worms on top.
