I would have to say that the answer depends on the set of circumstances.

1) The definition of madness is "doing the same thing over and over while expecting a different result." In this case, the individual who is unable to accept defeat would be clinically insane.

2) An individual has a driving passion for a particular subject or endeavor. They work their behinds off learning everything they can and diligently trying to pursue their goal. No matter what happens to them, no matter who tells them their chances of succeeding are less than 0.0001%, they still keep trying. In this case, I would describe the person as being "tenacious and irrepressible."

Thankfully, we have a few out there who could well be described as falling under number 2. Edison is a good example. This is one of my favorite quotes by him. When he was asked by a reporter to define the word "genius" he said,

"Genius is 1% inspiration and 99% perspiration."

Also, when he had done over 1200 experiments in the effort to make the light bulb, each and every one of them failing, he was asked by an assistant, and I'm paraphrasing here, "Aren't you ready to give up?"

Edison's answer was, "No. Now I know 1200 ways not to make a light bulb."

Passionate. Tenacious. Irrepressible. All very good descriptions of someone unwilling to accept defeat.

Persistent, which can be a good thing. However, there are those who don't accept defeat, even when they loose. Such as when you beat them in a game of basketball and they tell you they really won because of a bad call or something like that. Those people are called jerks and other names I can't put here.

The only term that comes to mind is "sore loser," but this is probably considered slang and there may be a more formal term that I'm not thinking of.
