When I then click on Undo, the rest of the document returns to normal while the highlighted word retains the new formatting. How can I stop this happening?

Sounds like your Normal.dot template is messed up.
Go into Windows Explorer
Navigate to C:|windows\program files\Microsoft Office (or wherever it's installed to)
Click Normal.dot
Delete
Begin Word again and the template will regenerate and you should be able to open the file and change the single word

In addition to empress the only other thing I can think of is that you have "automatic update" selected for the "style" that is currently applied to that word. Turn it off.
