our ancestors didnt survive for a bajillion years by avoiding eating things that sat out in pot after they were already cooked. see those pointy teeth in your mouth? those are the canines, they're FANGS. those arent made for chewing, they're made for KILLING. so, at one point, we needed to bite things to kill it,and make it food. that means a mouth full of blood and uncooked meat thats still trying to get away. if we could handle that, i'll eat all the day old chili in the world.

if you're the type that cant handle eating something that sat for a few hours or so, then you need help. humans are animals, never forget that, and stop underestimating your digestive system.

but yeah heat it up (cold chili is gross).

it's more a matter of personal preference, I would say, or aesthetics. in theory though, you should be able to boil it for say 10-15 minutes, afterwhich any bacteria, etc which would have started to colonize would be killed off. The food may also start to get a bit mealier then or mushy as you recook and overcook.

but refrigeration is pretty much a 20th century invention. so current recommendations are based on that. in reality, we've gone for eons without.

The only one who can tell u what to do is your tummy. If you're feeling brave, heat up just a tiny bit & eat it. Wait by the "throne room" & see what happens. If after 20 minutes or so you feel fine, then there you go! :)

As long as you heat if up enough to kill any bacteria that may have formed you'll be okay. And make sure that it's heated all the way through. Individual portions make it easier to ensure proper heating.
