Turkey eggs are not available on a commercial scale simply because there is very little demand. They are also expensive to mass-produce. Turkey hens lay an average of 4.5 eggs per week over 24 weeks. Although the runny yolk is not ideal for frying, turkey eggs are delicious scrambled and particularly lend themselves to baking for an extra fluffy texture! Many farms sell eggs at the farm gate to local shoppers

It's simple. They are more expensive to produce. The cost per bird to feed with the return in egg production is higher in Turkeys than in Chickens.
I went to a grocery store in Ecuador and found Ostrich eggs for sale. They also had quail eggs on the shelf.
I bought an Ostrich egg...(it was about 15 dollars US currency about 5 years ago) and I managed to get it back home without breaking it. I still have it sitting next to a finch egg someone gave me. The size difference is striking.
I had intended to cook the Ostrich egg, but I never got around to it. It would have made a hell of an omlette!

fee. Turkeys are two times as high priced to advance and lay 0.5 the eggs of chickens, yet they DO stay longer. we could advance turkeys and harvest the eggs, yet on the food market, ounce for ounce, the fee might finally end up approximately 8x the fee of fowl eggs on the instant. A turkey egg is approximately two times the quantity of a fowl egg. So, to get an identical quantity of protein, you will possibly desire basically 6 turkey eggs to equivalent a dozen fowl eggs. An omelet made with 4 fowl eggs may well be an identical length with basically 2 turkey eggs. A dozen fowl eggs runs approximately $2.50 on sale final I regarded. 0.5 a dozen turkey eggs might probably fee $20. i'm uncertain all and sundry is waiting to spend that style of funds. That mentioned, some close by farmers do sell turkey eggs at close by markets the place I stay. The $20 estimate comes from an economics type I audited a mutually as lower back. We have been staring at quantity production as fowl eggs are harvested on the instant. We did this same style of study for a number of ingredients. i do no longer undergo in concepts the charges I observed final summer time on the farmer's markets, yet I DO undergo in concepts seeing a pair of stalls with turkey eggs. I undergo in concepts one stall that some Emu eggs.

i have a friend who farms turkeys and he lets me have a couple of turkey eggs on a regular basis, they are richer than a chicken and dont have the disadvantage of tasting fishy like duck eggs. Incidentally the same man also keeps guinea fowl and i will have a couple of their eggs within the next week or so to try.

My neighbor since childhood actually raised turkeys on a huge farm and they actually sold the eggs to local markets for consumpton. We always ate them growing up and they are pretty tasty. They are bigger than chicken eggs and since chickens are easier to raise. Also most turkey eggs are to big for a recipe that calls for one egg.

I've never thought of it before. Maybe because there isn't a high demand for them, and I assume the same is with duck eggs.
