By "shuffle", do you mean shift sentences or paragraphs to different locations in the document? I assume you're using WordPad or EditPad. (These applications work with text (.txt) documents.) You can select the text and then drag and drop it to where you want it.

Well, your question is not targetting what you need. What I understand is you need to take out all test documents from a folder.

For this you can do one thing. Go to start---> search and then type *.txt if text documents or *.doc if word documents. And then choose the folder in which you want to shuffle. Click search. You will get all the files. Copy it and thus u get the files.
