this is from allrecipes.com and it's a really good one i tried it and my kids and husband ate them all the same day
1/2 cup butter, softened
1/2 cup butter flavored shortening
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 cup creamy peanut butter
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
Cream the butter, butter flavored shortening, and sugars. Add eggs and blend. Add peanut butter and vanilla. Add dry ingredients and stir until well blended.
Measure out tablespoonfuls of dough and roll into balls. Place 3 inches apart on lightly greased cookie sheets. Make criss-cross pattern with fork.
Bake in a pre-heated oven at 375 degrees F (190 degrees C) 8-10 minutes until set, but not hard. Do not overbake. Leave on sheets for 2 minutes before removing. Cool, and store in covered container.

Delicious peanut butter cookies are always welcome.
INGREDIENTS:
* 2 cups all-purpose flour
* 1 teaspoon baking soda
* 1/2 teaspoon baking powder
* 1/4 teaspoon salt
* 3/4 cup butter, room temperature
* 3/4 cup peanut butter, chunky or smooth
* 3/4 cup granulated sugar
* 3/4 cup light brown sugar, firmly packed
* 2 large eggs
* 1 teaspoon vanilla
PREPARATION:
In a bowl, stir together flour, baking soda, baking powder, and salt.
Beat together the butter, peanut butter, and sugars until light and fluffy. Beat in eggs and vanilla. Gradually beat in the flour mixture.
Wrap dough in plastic wrap and refrigerate until chilled, or about 2 to 4 hours.
Take tablespoonfuls of dough and roll into balls with hands. Place about 3 inches apart on greased baking sheets. Using a dinner fork dipped in flour, lightly press cookies, flattening and forming a criss-cross pattern on each cookie.
Bake at 375° until golden brown, or about 10 to 12 minutes. Cool on baking sheets for a minute; transfer to rack to cool completely.
Makes about 4 dozen peanut butter cookies.

This is a really simple recipe. The cookies are really light and melt in your mouth. I swear they're the best peanut butter cookies ever. I was never a fan of peanut butter cookies until I tasted these. If you follow the directions completely, the recipe will make about 70 cookies. I like my cookies larger, so I get far fewer.
1Cup Peanut Butter (creamy or chunky)
1Cup Sugar
1Large Egg
1Teaspoon Baking Soda
Preheat oven to 350 degrees. Grease baking sheets. Beat together peanut butter and sugar until well combined. In a separate bowl lightly beat egg. Beat the egg and baking soda into the peanut butter mixture until well combined. (I usually pop the cookie "dough" into the fridge for a few hours after this step)
Roll level teaspoons of dough into balls and arrange 1 inch apart on baking sheets. Flatten balls with the tines of a fork making a crosshatch pattern. Bake cookies in middle of oven until puffed and pale golden, about 10 minutes. Cool cookies on baking sheet for about 2 minutes then transfer to racks to cool completely. Cookies may be kept at room temperature for 5 days in an airtight container.

Best Peanut Butter Cookies
Packed with great peanut butter taste, these Betty's Best peanut butter cookies are sure to please.
Prep Time:15 min
Start to Finish:2 hr 25 min
Makes:2 1/2 dozen cookies
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup peanut butter
1/4 cup shortening
1/4 cup butter or margarine, softened
1 egg
1 1/4 cups Gold Medal® all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1. Mix sugars, peanut butter, shortening, butter and egg in large bowl. Stir in remaining ingredients. Cover and refrigerate about 2 hours or until firm.
2. Heat oven to 375ºF.
3. Shape dough into 1 1/4-inch balls. Place about 3 inches apart on ungreased cookie sheet. Flatten in crisscross pattern with fork dipped into sugar.
4. Bake 9 to 10 minutes or until light golden brown. Cool 5 minutes; remove from cookie sheet. Cool on wire rack.
(Total time will vary; cook or bake time is per batch.)

1-1/4 c. firmly packed light brown sugar
3 T. Milk
1 T. Vanilla
1 egg
1-3/4 c. All purpose flour
3/4 t. salt
3/4 t baking soda
!. Heat over to 375 degrees. Place sheets of foil on counter top for cooling cookies.
2. Combine peanutbutter.crisco,light brown sugar,milk, &vanilla in a lg bowl. Beat at medium speed w/ a mixer until well blended. Add egg. Beat just til blended.
3. Combine flour,salt, and baking soda. Add to creamed mixture at low speed. Mix til blended. drop by teaspoonfuls 2 in. apart onto ungreased cookie sheet. Flatten slightly in crisscross patterns with tines of fork.4. Bake at 375 for 7-8 min or until set ,and just beginning to brown. cool 2 min on cookie sheet . Remove cookies to foil to cool completly.
Makes about 3 doz cookies.

"Chunky Chocolate Chip Peanut Butter Cookies" - 3 dozen
1 1/4 cups all-purpose flour
1/2 tsp. baking soda
1/2 tsp. ground cinnamon
1/2 tsp. salt
3/4 cup (1 1/2 stick) butter or margarine; softened
1/2 cup packed brown sugar
1/2 cup granulated sugar
1/2 cup creamy peanut butter
1 egg
1 tsp. vanill extract
2 cups (12 oz. pkg.) Nestle Toll House Semi-Sweet Chocolate Morsels
1/2 cup coarsely chopped peanuts
Combine flour, baking soda, cinnamon and salt in small bowl. Beat butter, brown sugar, granulated sugar and peanut butter in large mixer bowl until creamy. Beat in egg and vanilla. Gradually beat in flour mixture. Stir in morsels and peanuts.
Drop dough by rounded tablespoon onto ungreased baking sheets. Press down slightly to flatten into 2" circles.
Bake in preheated 375* oven for 7-10 minutes or until edges are set but centers are still soft. Let stand for 4 minutes; remove to wire racks to cool completely.
