Fattening yet deviliciously delicious.
What you need
Sweet potatoes peeled, sliced into 1/2" inch discs, and parboiled (important not to over cook them, you want them soft but not falling apart)
Sugar (white or brown)
melted butter
butter for frying
Dip the parboiled potatoes in melted butter than coat with sugar (you can mix other things in the sugar if you like, I use cinnamon, nutmeg and vanilla powder). Place coated potatoes in a pan with lots of melted butter for frying, you want to caramelize the sugar. You don't want the heat too high or you'll burn the sugar instead of caramelizing it. I do these in batches and put the finished ones in a baking pan kept warm in the oven as I go. These turn out sweet gooey and decadent.

You can boil them, or steam them. Just peel off the skin and chop them up into 1/2 inch cubes and boil/steam till soft.
Or you can bake them. Half a sweet potato length ways, drizzle some olive oil. Season with salt and pepper, and if you're really daring, add some dried chilli or cayenne pepper. Bake in the oven at 200 C for about 30 minutes or until soft.

Prepare them like you would a reg. potatoe. You can either bake it (if you do that wash the tater first) and when it's done you can butter it and put some marshmellows in it or some cinn and sugar. Or you can make candied sweet potatoes. Once the taters are done you will dump the water out, put some butter on top of the potatoes, sprinkle some brown sugar on top and mix all together ..yum yum..:)

I make a baked sweet potato in the microwave. Wrap in plastic wrap and cook for about 5 minutes or until soft. I either add butte r and salt and pepper or cinnamon & sugar.
I have also fried them in chips, just like homemade potato chips.

This is how I make my sweet potatoes:
Peel & cut them into little chunks.
Put them in a pot with enough water to cover the bottom of the pan, white sugar, vanilla extract (1 teaspoon), butter & cinnamon & a dash of lemon juice.
Stir it up & bring to a boil, once it's boiled lower the flame & cover, let them cook until tender.
Be sure to stir then often so they all get covered with the mixture.
I don't have exact measurement, just do it to your taste.

The are Delicious roasted along with any other root vegetables. Cut veg up into smallish chunks, fry until lightly browned and transfer to a roasting tin or dish. Add salt and pepper and mixed herbs and a couple of tablespoons of runny honey and roast at about 200c for 30 mins or until golden brown.
You can use: potato, carrot, parsnip, squash, celiaric etc etc.

when you get tired of regular sweet potatoes you must try the white sweet potatoes they are the best a little hard to find but well worth it

boil it in plain water
add 1/2 cup of grated coconut for 1 cup of sweet potato and sugar depending on how sweet you want it to be.
will go nice as a side dish with spicy food.
its a great dish. hope you will love it.

Sweet Potatoes
It's the best!
1¼ hours 30 min prep
INGREDIENTS
7-8 yams
1 cup sugar
1/2 cup melted butter
2 eggs
1/3 cup milk
1 teaspoon vanilla
TOPPING
1/2 cup brown sugar
1/4 cup flour
1/2 cup chopped nuts
2 tablespoons melted butter
DIRECTIONS
Bake potatoes until soft.
Mix all ingredients until smooth.
Bake at 350 F for about 40-45 minutes.
-------TOPPING----------.
mix all dry ingredients.
Sprinkle over.
Divide butter over pan.

peel and cut them up...Boil for 20 minutes....drain and mash with some butter and 1/2 cup or so of brown sugar...In a seperate bowl mix 1 cup flour one cup brown sugar 1 cup walnuts or pecans then pour 1 cup melted buter in and mix to a crumble....Put sweet potatoes in a casserole dish...Top with crumble and bake for 1/2 hour then under the broiler for 2-3 minutes {be very carful on this part}....Yummy!
