BUTTER COOKIES
INGREDIENTS
* 2 cups butter, softened
* 1 1/2 cups white sugar
* 4 egg yolks
* 1 1/2 teaspoons vanilla extract
* 4 1/2 cups all-purpose flour
* 1/2 teaspoon salt
DIRECTIONS
1. In a large bowl, cream together the butter and sugar. Beat in the yolks one at a time, then stir in the vanilla. Combine the flour and salt; stir into the creamed mixture. Shape dough into logs about 2 inches in diameter. Wrap in waxed paper and refrigerate or freeze until firm.
2. Preheat oven to 350 degrees F (175 degrees C). Unwrap rolls. You can roll the logs in nuts or sprinkles before slicing. Slice into 3/8 inch wide slices. Place slices 2 inches apart onto ungreased cookie sheets.
3. Bake for 8 to 10 minutes in the preheated oven. Do not brown. Remove to a wire rack to cool completely.

Oatmeal Sugar Cookies
INGREDIENTS
* 1 cup unsalted butter
* 1 cup white sugar
* 1 teaspoon vanilla extract
* 1/4 teaspoon almond extract
* 1 cup all-purpose flour
* 3/4 teaspoon baking soda
* 1/4 teaspoon salt
* 1 cup rolled oats
* 1/3 cup granulated sugar for decoration
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
2. In a medium bowl, cream together the butter and sugar until light and fluffy. Stir in the vanilla and almond extracts. Sift together the flour, baking soda, and salt; stir into the butter mixture. Finally, mix in the rolled oats.
3. Roll dough into balls about 1 inch in diameter. Place the dough balls about 3 inches apart onto the prepared cookie sheet. Dip the bottom of a glass in water and then in sugar, use this to flatten down the cookies. Sugar the glass as needed. Bake for 8 to 10 minutes, cookies should be slightly browned. Store in an airtight container.

Simple Oatmeal Cookies
1 1/2 cups flour
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1 egg, slightly beaten
1 cup sugar
1/2 cup shortening, melted (can use butter)
1 tablespoon molasses
1/4 cup milk
1 3/4 cups oatmeal, uncooked
1/2 cup raisins
For Cowboy Cookies (add in)
3/4 cup sweetened coconut, flaked (reduce oatmeal by 1/4 cup) or sweetened coconut, shredded (reduce oatmeal by 1/4 cup)
1/2 cup chocolate chips
DIRECTIONS
Preheat oven to 350°.
To make Simple Oatmeal Cookies: Mix the flour, baking soda, cinnamon and salt together in a large bowl.
Stir in the remaining ingredients.
Arrange by teaspoonfuls on unbuttered cookie sheets. Leave about 1 inch in between. They do spread a wee bit. Not too much though.
Bake until the edges are brown, about 10-12 minutes.
For Cowboy Cookies: Add in coconut and chocolate chips when you add in the rest of the ingredients (Step 3). Drop them by the FULL tablespoon on a cookie sheet. (Might have to "squish" them a bit) Bake for 14-17 minutes or until mostly brown.

Here is simple and easy one for Peanut Butter Cookies.
1 cup crunchy peanut butter
1 egg
1 cup sugar
Make into balls and flatten onto a cookie sheet with a fork dipped in sugar. Bake at 350 degrees for about 8 to 10 minutes.
Yummy!

One 16-oz bag of milk chocolate chips
6 oz premium white chocolate, finely chopped
3 cups walnut pieces
In a very large bowl cream together the butter, sugars, vanilla, maple and eggs. In a separate bowl combine the flour, ground oatmeal, baking soda, baking powder and salt. Add the dry ingredients to the butter mixture. Fold in the remaining ingredients. Roll into balls and freeze or bake in a 375° oven for 10-12 minutes.

BASIC BUTTER COOKIES
These cookies are absolutely delicious made with regular butter, but they become downright amazing with Plugra or Land O Lakes Ultra Creamy. Dough log can be chilled up to 5 days or frozen, wrapped in a double layer of plastic wrap, 1 month. If frozen, thaw dough in refrigerator just until it can be sliced. Instead of forming dough into a log and chilling, you can roll tablespoons of dough into 1 1/4-inch balls, then roll balls in finely chopped nuts (about 1 cup) and coarse sugar. Bake, switching position of sheets halfway through baking, until bottoms are browned, about 15 minutes total. To garnish cookies with chocolate, melt 3 1/2 ounces chocolate and cool slightly. Transfer to a heavy-duty sealable plastic bag and snip a 1/16-inch opening in 1 corner. Pipe chocolate evenly back and forth over cookies. Let chocolate set before storing cookies. Cookies keep, layered between sheets of waxed paper or parchment, in an airtight container at room temperature 1 week.

Whisk together flour, baking powder, and salt in a small bowl.
Beat together butter and sugar in a large bowl with an electric mixer at medium-high speed until pale and fluffy, about 3 minutes in a standing mixer (preferably fitted with paddle attachment) or 6 with a handheld. Beat in egg and vanilla. Reduce speed to low, then add flour mixture and mix until just combined.
Form dough into a 12-inch log (2 inches in diameter) on a sheet of plastic wrap and roll up dough in plastic wrap. Chill dough on a baking sheet until firm, at least 4 hours. (To roll cookies into balls, see cook's note, below.)
Put oven racks in upper and lower thirds of oven and preheat oven to 375 degrees F.
Cut enough 1/8 to 1/4-inch-thick slices from log with a heavy knife to fill 2 ungreased large baking sheets, arranging slices about 1-inch apart (chill remainder of log, wrapped in plastic wrap). If garnishing with coarse sugar, sprinkle slices with it.
Bake cookies, switching position of sheets halfway through baking, until edges are golden, 12 to 15 minutes total. Cool on sheets 3 minutes, then transfer with a metal spatula to racks to cool completely. Make more cookies with remaining dough on cooled baking sheets.
*Note-Sanding sugar is found in most specialty foods shops
