Frozen Peppermint Pie
The peppermint taste is devine. This is so easy to make, you'll want to have it a lot! :-)Very quick to make! The cook time is for freezing.
8 servings 3¼ hours 10 min prep
1 pie crust, graham
8 ounces cream cheese, softened
14 ounces sweetened condensed milk
3 tablespoons creme de menthe
1 drop red food coloring, optional
1 (8 ounce) container whipped topping
Beat cream cheese until fluffy.
Gradually beat in milk.
Stir in creme de menthe.
Fold in whipped topping.
Pour into crust.
Freeze for 4 hours.

Peppermint Pie
22 to 23 large marshmallows
1/3 cup milk
1 teaspoon peppermint extract
Few drops of red food coloring
1 small container of Cool Whip, thawed (or other prepared whipped topping)
Graham cracker crust
Finely crushed peppermint candy
Melt marshmallows with the milk over low to medium heat. Add the extract and food coloring. Cool in the refrigerator until mixture mounds off a wooden spoon. Fold together with whipped topping and pour into the graham cracker crust. Chill thoroughly. Sprinkle crushed peppermint candy over top of pie just before serving. Variation: Grasshopper Pie Substitute regular mint extract for the peppermint extract. Use green food coloring. Pour into a chocolate cookie crust and top with shaved chocolate.

Makes 8 servings
Ingredients
3 tablespoons butter or margarine, melted
24 creme-filled chocolate sandwich cookies, crushed
1 bag (10 1/2 ounces) miniature marshmallows
1 cup 8th Continent® vanilla soymilk
1/8 teaspoon salt
1 cup whipping (heavy) cream, whipped or 2 cups frozen (thawed) whipped topping
1 cup crushed peppermint candies
Directions
1. Stir together butter and cookie crumbs until well mixed. Press into ungreased pie plate, 9x1 1/4 inches; refrigerate.
2. Set aside 1 cup of the marshmallows. Heat soymilk, remaining marshmallows and salt in 4-quart saucepan over medium heat, stirring constantly, until marshmallows are melted and mixture is smooth. Refrigerate about 10 minutes or until cool and slightly thickened.
3. Stir soymilk mixture well; gently stir in whipped cream and 1 cup marshmallows. Reserve 2 tablespoons crushed candy; gently stir remaining candy into soymilk mixture. Spoon into crust; sprinkle with reserved candy. Refrigerate at least 4 hours until firm. Cover and refrigerate any remaining pie.

* 1/4 cup chocolate cookie crumbs
* 1 (8 ounce) package cream cheese, softened
* 1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk (NOT evaporated milk)
* 1 cup crushed hard peppermint candy
* 1 drop Red food coloring
* 1 (8 ounce) tub frozen non-dairy whipped topping, thawed
DIRECTIONS
1. Spray 9-inch pie plate with non-stick cooking spray. Sprinkle cookie crumbs on sides and bottom of plate.
2. In large bowl, beat cream cheese until fluffy. Gradually beat in EAGLE BRAND® until smooth. Stir in candy and food coloring (optional).
3. Fold in whipped topping. Pour into prepared plate. Cover; freeze 6 hours or until firm. Garnish as desired. Freeze leftovers.

An easy way to make a peppermint pie. Melt 1 package of mini-marshmallows and 10 peppermint candies in a pot with 1 stick of melted butter. Stir often. Then lightly thaw 1/2 gallon of vanilla ice cream. Blend the two together. Spread in graham cracker pie tins. Refreeze. Lightly thaw before serving. And .. . . . . . .. ..
