Home made, with home made cheese sauce.

With onions finely chopped and mixed in with the macaroni, suce poured over, when cooked, sprinkle red leciester over the top and melt red leciester under the grill.

Serve with jacket potatoe, salad and a dessing of your choie.

Homemade, of course! It's easy. Just cook the macaroni noodles until they are soft by adding it to boiling water....it takes about 15 minutes. Then drain the water from the noodles. Place one layer of noodles in a casserole dish. Add a layer of shredded cheddar cheese. Then, add another layer of noodles and cheese.....do this as many times as you need to....depends how much you want to make. Make sure the top layer is cheese. Then pour a little milk over the top. Bake it in the oven on 375 for 30 to 45 minutes....until the top becomes golden.

Def home made....you can do loads of different combos!!! Try adding crispy smokey bacon and crumble a bit of blue cheese in the mix...that's a change...or smoked salmon, fresh tarragon and use a creamy herb/garlic cheese like Boursin in with the white sauce...the combos are endless !!! But you cant beat a really good cheddar cheese just with the old fashioned macaroni...don't buy any of those quick cook pastas..just go a bit soggy and texture not so good. Happy noshing !!!!

SPECIAL MACARONI AND CHEESE SALAD

350g elbow macaroni
1/4 cup firmly packed parsley leaves
1/3 cup olive oil
3 tablespoons olive oil
6 dashes Tabasco sauce
500g feta, mozzarella or cheddar cheese, cubed
2 jars (200g each) red peppers, drained and thickly sliced
1/2 cup pitted black olives, halved
parsley sprigs (optional garnish)


Cook the macaroni according to packet directions.
Puree the parsley, oil, lemon juice and Tabasco sauce in food processor or an electric blender at high speed until smooth.
Transfer to a large bowl.
Drain the macaroni, rinse well and add to the bowl along with the cheese, peppers and olives.
Toss well to mix, check the seasoning and garnish if you like

Make a roux (butter, flour) add milk add lots of cheese (off heat)
add to cooked macaroni put in an oven proof dish top with breadcrumbs and sliced tomato and bake in oven. You can also add garlic to sauce which is nice.

My favourite is:

par boil rigatoni
butter Pyrex dish
add rigatoni and lots of different grated cheese
top with single fresh cream
sprinkle with a bit more cheese
and bake in a moderate oven for about 30-40 minutes.

Yummy. In fact come to think of it, I think I will make this tonight for dinner! Thanks xxxx
