For the last 10 or 15 minutes of the baking time, cover the top with aluminum foil. It will keep the top from browning any futher, but will allow the bread to finish baking completly. Happy bread making.

before you put your bread in the oven give the top a light spray of PAM or brush it with olive oil, then cover the top only with foil.you could be creative and sprinkle herbs/spices on top.when bread is about 10Min's away from being done remove the foil so that the top browns.Ive never done this because i lack patience as a virtue but this is what i do when I roast a chicken,or a turkey.hopefully you'll get some answers from expert bread makers.good luck

I think you may have your oven too hot. You should preheat the oven to gas mark 9 or 250c then bake the bread for 5 minutes then turn the temperture down to 200c or gas mark 6 and cook for further 30-35 minutes. It should sound hollow when tapped underneath.

I have a good recipe for this bread. I could email it to you if you like.

You could try reducing the heat and lowering your oven rack so that it isn't so close to the top. Also make sure that the pan you are using isn't too big for the oven. If the pan is too big it will prevent the hot air from circulating properly. Good luck.
