My eyes are sore inside as though I am dehydrated all the time. If I do drink too much wine even though I drink plenty of water as well I get diarrhoea.

Go get checked for diabetes. You might be getting a collapse of glucose level from the alcohol. Thirst is another symptom of diabetes. Alcohol will dehydrate anybody by causing more rapid sweat and more frequent bathroom visits.

Could be a yeast allergy. It could be causing the headaches/ eye pains, as could the dehydration.
Clearly, though, you will have to do without the wine.

The best way to cure your thirst is to drink water .So quit drinking wine and your problem is gone.That simple.
